🐰Easter Dirt Cups 🐰

Ingredients:
36 to 46 finely crushed Oreos
1 package of vanilla pudding (3.9 ounces)
2 cups of cold whole milk
1 container of Cool Whip (8 ounces, thawed)
36 Mini eggs (or more if desired)
12 Bunny Peeps

Instructions:
1. Prepare 12 cups that hold 8 ounces each by placing 1.5 tablespoons of crushed Oreos in the bottom of each.
2. In a large bowl, add the vanilla pudding mix and pour in 2 cups of cold whole milk. Using a hand mixer, whisk the mixture for 2 minutes.
3. Gently fold in the thawed Cool Whip using a spatula until well combined.
4. Add 2 heaping spoonfuls of the pudding mixture to each cup, followed by another 1.5 tablespoons of crushed Oreos on top.
5. Repeat by adding 2 more spoonfuls of pudding and a smaller layer of crushed Oreos, about 1 tablespoon, on top.
6. Refrigerate the cups for at least 1 hour before adding 3 mini eggs and a Bunny Peeps Marshmallow Treat on top of each.

🍞 Sweet Alabama Pecan Bread 🍞

Ingredients:
1/2 cup unsalted butter, melted
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans

Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.

Beat in the eggs, one at a time, followed by the vanilla extract.

Stir in the buttermilk until fully combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.

Gently fold in the chopped pecans, ensuring they're evenly distributed.

Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Ingredients:

For the Cake:

2 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs, room temperature
1 tablespoon pure vanilla extract
1 cup whole milk, room temperature
For the Buttermilk Sauce:

½ cup unsalted butter
1 cup granulated sugar
1 cup buttermilk
1 teaspoon pure vanilla extract
½ teaspoon baking soda
Instructions:

Prepare the Cake Batter:

Preheat oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
Alternate adding the dry ingredients and milk, beginning and ending with the flour mixture.
Bake the Cake:

For the Crust:

2 cups chocolate cookie crumbs
½ cup melted butter
For the Mousse Filling:

1 ½ cups heavy cream
1 cup semisweet chocolate chips, melted
¼ cup powdered sugar
1 teaspoon vanilla extract
For the Chocolate Layer:

¾ cup semisweet chocolate chips
½ cup heavy cream
For the Topping:

½ cup whipped cream
Chocolate shavings or cocoa powder (optional)
👩‍🍳 Directions
1️⃣ Prepare the Crust:

Mix chocolate cookie crumbs with melted butter until combined.
Press firmly into the bottom of an 8x8-inch dish.
Refrigerate while preparing the filling.
2️⃣ Make the Mousse:

In a bowl, beat heavy cream, melted chocolate, powdered sugar, and vanilla extract until smooth and fluffy.
Spread the mousse evenly over the chilled crust.
Refrigerate while preparing the next layer.
3️⃣ Add the Chocolate Layer:

Heat heavy cream until warm (do not boil), then pour over the chocolate chips. Let sit for a minute, then stir until smooth.
Pour the chocolate mixture over the mousse layer, spreading evenly.
Chill for at least 4 hours or until set.
4️⃣ Garnish & Serve:

Before serving, top with whipped cream and garnish with chocolate shavings or a dusting of cocoa powder.

Soft and Fluffy Cake 🍰

Ingredients:
- 5 large egg yolks
- 1 tsp vanilla extract (5g)
- Pinch of salt
- 1/2 cup milk (120ml)
- 1/2 cup vegetable oil (120ml)
- 1 1/2 cups cake flour (171g)
- 1 1/2 tsp baking powder (6g)

Meringue:
- 5 large egg whites
- 1 tsp lemon juice or distilled vinegar (5ml)
- 1/3 cup sugar (67g)

Instructions:

1 Cake Base:
- Separate the eggs into separate bowls.
- Beat the yolks and add the milk, vegetable oil, and vanilla extract. Mix well.
- Sieve in the cake flour, baking powder, and salt. Mix until well combined.

2. Make the Meringue:
- Whisk the egg whites until foamy, then add the lemon juice or vinegar.
- Gradually add the sugar while continuing to whisk until stiff peaks form.

3. Combine:
- Gently fold the meringue into the cake batter until just combined.
- Do not overmix to avoid a flat and dense cake.

4. Bake:
- Pour into a baking tray and bake at 175°C (347°F) for 24 minutes or until a toothpick comes out clean.
- Cool upside down on a cooling rack.

- 1 cup cake flour

- 1 teaspoon baking powder

- 1¾ cups granulated sugar
- ¾ cup vegetable oil
- ¼ cup butter-flavored shortening
- 2 large eggs
- 1–2 teaspoons pure vanilla extract
- 1 tablespoon pure lemon extract
- 1 heaping teaspoon lemon zest (from 1–2 lemons)
- 1 cup buttermilk
- ½ teaspoon white distilled vinegar
- ⅓ cup hot water mixed with 2 tablespoons fresh lemon juice
- 4–6 drops yellow food coloring (optional)

For the Lemon Cream Cheese Frosting:

- 16 ounces cream cheese, at room temperature
- 8 tablespoons unsalted butter, at room temperature
- 1½ teaspoons pure vanilla extract
- 1½ teaspoons pure lemon extract
- 1½ heaping teaspoons lemon zest (from 2 lemons)
- 4–5 cups powdered sugar, sifted
- 1–2 teaspoons lemon juice (if needed)
- 4–5 drops yellow food coloring (optional)

Instructions:

1. Preheat Oven: Preheat your oven to 325°F (163°C). Grease and flour two 9-inch round cake pans.

2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cake flour, baking soda, baking powder, and salt. Set aside.

3. Combine Wet Ingredients: In a large mixing bowl, beat the granulated sugar, vegetable oil, and butter-flavored shortening until well combined. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, lemon extract, and lemon zest.
