(Headline): I got the last laugh

I used to be a little on the “plus side”...
Actually, who am I kidding? I was 5’ 7” and 215...and no matter what I told myself back then, I did not “wear it well.”

But now that I’m down to 167 and counting, I can’t WAIT to share my story! See, back then I had this one coworker who was a TOTAL JERK
He was a gym rat who was in great shape. If he wasn’t so mean, I probably would’ve had a crush on him...
Anyway, he would always see me walk in with my big creamy frap and say...
“THAT is basically a milkshake for adults. No wonder you barely fit through the door!”
At the time, I would always snap back with some sort of comeback. I didn’t want to look like I couldn’t take it. The whole office was full of guys like him so I wanted to prove I was “one of the guys”.
But deep down, it HURT!
On the one hand, I felt insulted. Like he was talking down to me because of my favorite coffee choice.
On the other, I secretly wondered if he was right. So one night I did some searching online.....and I discovered this mind blowing video that proved that my favorite coffee was NOT the problem.
In fact, by watching that video, I discovered a simple 30 second “coffee trick” I could use to transform it into the ultimate metabolism boost!
So I started using that “coffee trick” myself.....and within a few weeks, Mr. Jerkface had a VERY different reaction.

All the sudden, he was standing there drooling with nothing to say.....because I was in a WAY smaller and more flattering dress AND I was still drinking the same coffee as always.

At one point, he even walked up to me after work and asked what I was doing differently...and then he actually tried to ask me out!
TBH...it’s not out of the question.
But for now I’ve told him “maybe” and I’m enjoying watching him squirm

Cookie Cups with Chocolate Mousse
INGREDIENTS
• 150 grams of BUTTER WITHOUT SALT at room temperature
• 2/3 cup BROWN SUGAR
• 1/3 cup of CRYSTAL SUGAR
• 1 EGG
• 2 GEMS
• 1 tablespoon of VANILLA EXTRACT*
• 1/2 teaspoon of SALT
• 2 + 3/4 cup WHEAT FLOUR
• 2/3 cup CHOCOLATE DROPS
PREPARATION METHOD: COOKIE CUP
1. Mix the butter with the sugars until obtaining a homogeneous cream. Then add the egg and yolks and mix well.
2. Add the vanilla extract and salt and mix.
3. Add the flour and knead with your hands until obtaining a homogeneous mass.
4. TIP: Only knead until the flour is incorporated into the ingredients - if you knead too much from there, the dough will be soft and not crunchy.
5. Add the chocolate chips and then mold the dough into cups, cutting the edges with a knife. Then take it to the freezer for at least 2 hours so that the dough is completely frozen.
6. Preheat the oven to 220˚C and place a rectangular sheet of parchment paper inside the cookie cup. Then, crush a ball of aluminum foil and place it inside, to prevent the edges of the cookie from losing their shape.
7. Bake the cookie cups for 15 minutes and, as soon as they come out of the oven, unmold them and remove the foil and butter from inside. Allow to cool completely before using.
PREPARATION METHOD: COOKIE CUP WITH CHOCOLATE AND MILK
1. Melt the chocolate and pour it over the cup.
2. Turn the cup upside down and tap lightly to remove excess.
3. Take it to the freezer for the chocolate to harden.
4. Then pour milk over the cups and enjoy!
5. TIP: You can also use the cookie cup as a support to serve a delicious Nutella mousse*.

Macadamia Cookies and Strawberry Drops
INGREDIENTS
• 1/2 cup (tea) of softened BUTTER
• 1 tablespoon of VANILLA ESSENCE
• 1 large EGG
• 1/2 cup (tea) of CRYSTAL SUGAR
• 1/2 cup (tea) of BROWN SUGAR
• 1 and 1/2 cup of WHEAT FLOUR
• 1 pinch of SALT
• 1/2 teaspoon of CHEMICAL YEAST POWDER
• 1/2 teaspoon of SODIUM BICARBONATE
• 3/4 cup (tea) of chopped MACADAMIA
• 100 grams of Callebaut STRAWBERRY DROPS (or whatever you prefer)
METHOD OF PREPARATION
1. In a bowl, add the egg, vanilla, sugars and butter. Beat until it becomes a fluffy cream, it can be with an egg be**er or mixer.
2. Add all the sifted dry ingredients and mix, then add the macadamia nuts. Cover with plastic and let the dough rest in the fridge for 20 minutes.
3. Make balls using a dessert spoon as a measure. Place the balls on a greased and floured baking sheet or one lined with parchment paper, well away from each other, at least 7 cm, as they flatten and rise when baking.
4. After they are on the baking sheet, decorate with the strawberry drops, I managed to put 4 drops in each ball. Bake in a preheated oven at 180/200°C for 15 to 20 minutes, or until the edges are golden.
5. Wait for it to cool down a little and remove from the roast

• 1 can of green corn
• 1 Carrot
• 1 Scallion
• 1 small pepper

Ingredients to make Sago Fruit Salad:
• 1 cup of sago (tapioca pearls)
• 1 can of condensed milk
• 1 glass of coconut milk (200 ml)

How to make Fruit Salad with Sago:
Start by rinsing the sago well with running water, until the water comes out clean. This is important to eliminate the starch from the sago and make it firmer. Bring a pan with approximately 1.5 liters of water to the boil and wait for it to boil. When the water boils, lower the heat, add the sago and let it cook for 30 minutes or until the sago is transparent. Then drain and rinse the sago again, to eliminate the "drool" from it. In the blender, place the condensed milk and coconut milk and beat until blended. Place in a large bowl, add the drained sago and mix everything together. Ingredients to make Tropical Christmas Salad:
• ½ bunch of iceberg or curly lettuce

• ½ cup cherry tomatoes or grape tomatoes

• ½ cup of apricots
• 6 ripe strawberries
• mint leaves (to taste)
• 2 tablespoons of shredded gorgonzola cheese (optional)

Yogurt Salad Dressing:
• juice of 1 medium orange
• 1 pot of natural yogurt (170 grams)
• 2 tablespoons of honey
• 1 pinch of salt
How to make Tropical Christmas Salad:
Start by sanitizing the fruits and vegetables, washing them in running water and leaving them to soak for a few minutes in a solution of water with sodium hypochlorite. After this time, drain and rinse thoroughly.
Peel the fruits and chop them or cut them into slices. Use and abuse your creativity to make your salad very colorful and cheerful!
Dry the leaves a lot with the help of a paper towel or in a centrifuge suitable for drying vegetables, as in the photo. Reserve.
Spread the dried leaves on a wide platter. Leave the leaves whole to give more elegance to the dish and, if you want, tear the large lettuce leaves.
Add the fruit over the leaves as desired. If you prefer, separate them by color or texture too! Add the shredded Parmesan cheese and the shredded gorgonzola cheese. Cover with plastic wrap and place in the fridge.
Prepare your salad dressing by combining all the ingredients in a bowl: orange juice, yogurt, honey and salt. Keep the dressing in the fridge until it's time to serve your salad!
Drizzle some of the sauce over your fruit salad for Christmas when you serve supper and leave some of the sauce in the gravy boat, so your guests can help themselves when they taste this delicious salad!

BAKED POTATOES: HEALTHY RECIPE
The name of this recipe is a little misleading. This fries thing is not so clear: either they are fried or they are baked. The good news is that potatoes prepared this way will be the same as traditional French fries, but will be healthier, with a lot less oil. And all this, precisely, thanks to the fact that they are baked in the oven. With this step-by-step recipe we will see all the details, such as time, cooking temperature and oil distribution.

Step by step preparation
Pre-heat the oven at 180 °.
Peel the potatoes and cut them into slices about a centimeter or centimeter and a half thick. Then cut these slices into toothpicks about a centimeter thick.

RATATOUILLE, FRENCH VEGETARIAN RECIPE
The ratatouille recipe is one of the best known in French cuisine, but it became much more famous after the Disney movie of the same name.
The truth is that few dishes are as effective as this one to gather so many vegetables and take away so much flavor.
The main ingredients for making homemade ratatouille are tomatoes, peppers, onions, eggplant and zucchini, but like many vegetable dishes, you can use whatever you have on hand in the fridge and/or pantry.
Ingredients
• 3 tomatoes
• 1 green pepper
•2 garlic cloves
• 1 eggplant
• 1 zucchini
• 1 white onion
• 1 red pepper
• Salt to taste
• chili powder to taste
•Olive oil
• thyme to taste
• rosemary to taste
• 2 bay leaves
Step by step preparation
1. To start, we are going to peel the garlic and onion and cut them into very thin slices.
2. Next, we are going to wash the tomatoes and cut them into thin wheels.
3. To continue, let's wash the peppers, eggplant and zucchinis. We will remove the ends and seeds (in the case of peppers), cut into slices and keep each vegetable separately.
4. Now let's heat some oil in a pan over medium heat. Once hot, let's fry the onion and garlic for five minutes, stirring constantly. At the end of the cooking time, we will remove the pan from the heat, but we will leave the vegetables inside.
5. We are also going to heat oil in a frying pan, to cook the vegetables individually, and thus preserve their flavor better. We will start with the eggplant pieces, which we will cook for five minutes to soften them, after seasoning and mixing.
6. When the cooking time is over, transfer the cooked eggplants to the pan, with the onion and garlic.
7. We are going to heat more oil in the pan, over medium heat, and this time we are going to cook the peppers of both colors, also for five minutes and then season them.
8. We will also transfer them to the pan and repeat the procedure with the zucchinis. After seasoning and cooking for five minutes, we will do the same with the tomatoes, but this time for 10 minutes. We are also going to sneeze and finally we are going to pass them to the pot.
9. With all the vegetables in the pan, mix them and season with a bay leaf, a touch of thyme and a touch of rosemary. Then we will heat the preparation over low heat and, once hot, let it cook for another 10 minutes.
10. At the end of this time, we will taste the ratatouille to check the seasoning and, if necessary, correct with the wrong salt and/or pepper.
11. That's all. The ratatouille is now ready to be served, if you want to eat it hot. However, this dish can also be eaten cold. If you want a more visually pleasing presentation, you can alternate different vegetable slices or different colors.

2 large slices of homemade ciabatta or wholemeal bread
1 medium carrot, peeled and grated coarsely
¼ cup of sugar
¼ cup of alcohol or rice vinegar
¼ cup of water
¼ cup of raisins
½ cup ricotta, mashed (with fork)
2 tablespoons of olive oil
1 tablespoon of mayonnaise
2 tablespoons chopped chives
1 tablespoon chopped onion
Black pepper to taste
salt to taste
How to prepare Healthy Sandwich with ricotta paste, carrots and sweet and sour raisins
In a small bowl, place the water, vinegar, sugar, grated carrots and raisins. Place the mixture in the fridge for at least 30 minutes.
Soak the onion in a little warm water for a milder flavor. Reserve.
In another bowl, place the ricotta, mayonnaise, olive oil, chives, onion (drained), black pepper, and salt.
Using a sieve, drain the carrot-raisin mixture and add it to the ricotta paste. Mix well, taste and adjust the seasoning to your taste.
Toast the slices of bread in a skillet and spread the paste over them. Prepare a beautiful green salad to accompany and that's it.
This recipe yields two generous sandwiches.

This is one of my favorite salads, I just love cabbage with pineapple. Very quick to do. A big part of this salad was my dinner on a hot summer night. I served this salad as a one-time meal on a very hot day. You don't need anything else, this combination provides all the nutrients needed for a healthy meal.

Ingredients
 4 and ½ cups of skim milk tea
 2 packets of unflavored colorless powdered gelatin
 1 cup of toasted sliced almonds
 ½ cup of sugar
 ½ teaspoon of salt
 ½ teaspoon of almond essence
oil for greasing
Method of preparation
In a bowl, put ½ cup of milk tea and sprinkle the gelatin. Reserve. Blend the remaining milk and almonds in a blender until the contents are homogeneous. Strain and discard the solids. Put the liquid in a pan and add the sugar, salt and essence. Let it boil. Add the gelatin mixture, stirring until dissolved. Remove from fire. Place the pan in a bowl filled with ice for 30 minutes or until the milk mixture comes to room temperature. Stir occasionally. Distribute the mixture in the individual molds lightly greased with oil. Place in the fridge for 2 hours. Loosen the edges of the delicacy with a knife or rubber spatula and unmold onto a dessert plate.
Yield: 10 servings (1 serving=1 unit=100g)
