Cranberry Pistachio Shortbread Cookies
These cookies are a delightful mix of buttery shortbread, tangy dried cranberries, and crunchy pistachios. They're a perfect treat for the holiday season.
Ingredients:
• 1 cup unsalted butter, softened
• 1/2 cup powdered sugar
• 1 cup dried cranberries
• 1/2 cup chopped pistachios
Directions:
1. Preheat your oven to 350 degrees Fahrenheit.
2. In a mixing bowl, cream together the softened butter and powdered sugar until smooth.
3. Stir in the dried cranberries and chopped pistachios until well combined.
4. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
5. Gently press down on each ball with a fork to flatten slightly.
6. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
