Spicy Korean Cucumber Salad
Ingredients:
• 2 medium cucumbers, thinly sliced
• ½ teaspoon of salt
• 2 green onions, finely chopped
• 1 clove of garlic, minced
• 1 tablespoon of Korean red pepper flakes (Gochugaru)
• 1 tablespoon of sesame oil
• 1 tablespoon of soy sauce
• ½ teaspoon of sugar
• 1 tablespoon of rice vinegar
• 1 teaspoon of toasted sesame seeds
• Fresh cilantro (optional) for garnish
Directions:
1. Prepare the cucumbers:
- Thinly slice the cucumbers and sprinkle them with salt. Let them sit for 10-15 minutes.
- Rinse the cucumbers under cold water and drain them well. Squeeze out any extra water.
2. Make the dressing:
- In a small bowl, mix together the minced garlic, Korean red pepper flakes, sesame oil, soy sauce, sugar, and rice vinegar. Stir until the sugar dissolves.
3. Combine and marinate:
- In a larger bowl, mix the cucumbers with the chopped green onions.
- Pour the dressing over the cucumbers and toss everything together until well coated.
- Let the salad marinate for at least 10 minutes to soak up the flavors.
4. Finish and serve:
- Before serving, sprinkle the toasted sesame seeds over the salad.
- If you like, add some fresh cilantro on top for extra flavor. Enjoy!

Chicken Enchiladas with Sour Cream White Sauce
Ingredients:
2 cups cooked, shredded chicken
8 flour tortillas
2 cups shredded Monterey Jack cheese
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups chicken broth
1 cup sour cream
1 can (4 oz) diced green chilies
Salt and pepper to taste
Directions:
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a bowl, combine the shredded chicken and 1 cup of the shredded cheese.
Divide the chicken mixture evenly among the flour tortillas, roll them up, and place them seam-side down in the prepared baking dish.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.
Gradually add the chicken broth, whisking constantly, until the mixture thickens. Remove from heat and stir in the sour cream and diced green chilies.
Pour the white sauce over the enchiladas and top with the remaining cheese.
Bake for 20-25 minutes, or until the cheese is melted and bubbly. Serve and enjoy!

2 tablespoons soy sauce
2 tablespoons honey or brown sugar
