Egyptian Bread Pudding
Ingredients:
6 cups whole milk
1 cup heavy cream
1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 cup shredded phyllo dough (or puff pastry)
1/2 cup chopped mixed nuts (pistachios, almonds, walnuts)
1/4 cup raisins
1 tablespoon unsalted butter (for greasing the dish)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter.
Prepare the Milk Mixture:
In a saucepan, combine the milk, heavy cream, sugar, vanilla extract, and cinnamon. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
Assemble the Dish:
In the prepared baking dish, layer the shredded phyllo dough or puff pastry. Spread the nuts and raisins evenly on top of the dough.
Pour the Milk Mixture:
Slowly pour the hot milk mixture over the layered dough, nuts, and raisins. Allow it to soak for a few minutes so the bread absorbs the milk.
Bake the Umm Ali:
Place the baking dish in the oven and bake for 30-35 minutes, or until the top is golden brown and the pudding is set.
Serve:
Let the Umm Ali cool slightly before serving. Serve warm with a dusting of cinnamon on top for extra flavor.
