I had to hand over custody of this 250mm gyuto in mirror polished super gold 2 damascus (63hrc) this morning. Bittersweet as the new owner is an enthusiast home cook and will get great use out of this and the matching Nakiri, but I miss the blue already.
This colour in the wood is the most vibrant I've used to date. .
I'll be uploading plenty of pics with the saya as well. .

This knife also has rounded and mirror polished choils and spine, and no harsh corners or jutting areas.
Knife making is so epic.

As a result we have a Gabon Ebony ferrule and saya, concrete corian spacer with stainless shims and a Californian buckeye burl handle. .
The blade is mirror polished super gold 2.

I do a lot of test cutting and it takes a lot for me to get to the point of being so impressed i start laughing about the way a knife cuts. This knife makes me laugh.
