The Tom Collins is a classic gin-based cocktail that originated in the United States during the 19th century. It was first documented in writing in 1876 and gained popularity as a refreshing summer drink.

Recipe:
60 ml Hermetica Pine Needle Gin
22.5 ml fresh lemon juice
15 ml simple syrup
60 ml soda water
Garnish: Lemon wheel

Method:
1. Fill a Collins glass with ice cubes.
2. Add the gin, fresh lemon juice, and simple syrup to the glass.
3. Stir gently to combine.
4. Top with soda water and stir again.
5. Garnish with a lemon wheel.

The Dirty Martini is a variation of the classic Martini, believed to have originated in the early 20th century. The addition of olive brine gives it a slightly salty and savory flavor, complementing the herbal notes of the gin.
Recipe:
• 75 ml Hermetica Pine Needle Gin
• 15 ml dry vermouth
• 7.5 ml olive brine
• Garnish: Green olive or lemon twist
Method:
1. Fill a mixing glass with ice cubes.
2. Add the gin, dry vermouth, and olive brine to the mixing glass.
3. Stir well until chilled.
4. Strain into a chilled martini glass.
5. Garnish with a green olive or lemon twist.

The Bijou cocktail dates back to the late 19th century and is thought to have been created by Harry Johnson, a renowned bartender from New York City. Its name, which means “jewel” in French, reflects the vibrant colors of its ingredients.

Recipe:
45 ml Hermetica Pine Needle Gin
22.5 ml sweet vermouth
15 ml green Chartreuse
1 dash orange bitters
Garnish: Dried Lemon wheel

Method:
1. Fill a mixing glass with ice cubes.
2. Add the gin, sweet vermouth, green Chartreuse, and orange bitters to the mixing glass.
3. Stir well until chilled.
4. Strain into a chilled coupe or martini glass.
5. Garnish with a dried lemon wheel.

Autumn is in full swing in the valley, perfect weather for a tipple of the Shiraz Cask whisky. We made this drop in honour of our surroundings. The Yarra valley is a well known wine region so we sourced barrels to age our whisky in to create a product with a sense of place. It has notes of pepper, and red berries.
