When you receive your 𝙑𝙞𝙣𝙙𝙖𝙡𝙤𝙤 𝙎𝙥𝙞𝙘𝙚, try this easy and delicious 𝑽𝒊𝒏𝒅𝒂𝒍𝒐𝒐 𝑪𝒉𝒊𝒄𝒌𝒆𝒏 𝑯𝒆𝒂𝒕𝒘𝒂𝒗𝒆 recipe:

INGREDIENTS:
• 500g chicken thighs, diced
• 2 Tbsp 𝙑𝙞𝙣𝙙𝙖𝙡𝙤𝙤 𝙎𝙥𝙞𝙘𝙚
• Fish Sauce
• 500g diced pumpkin
• 1 head broccoli, cut into florets
• 1⁄2 cauliflower, cut into florets
• 2 tins tomatoes (+1 tin water)
• 100ml cream or coconut cream
• 𝙇𝙚𝙢𝙤𝙣𝙜𝙧𝙖𝙨𝙨 & 𝙂𝙞𝙣𝙜𝙚𝙧 𝙊𝙡𝙞𝙫𝙚 𝙊𝙞𝙡
• Basmati rice, prepared per package instructions
• Chillies, thinly sliced (optional)
DIRECTIONS:
Heat a pan to medium. Add chicken and Vindaloo Spice Blend, stirring to coat.
Cover pan and let cook for about 8 minutes.
Once chicken is cooked through drizzle with a little fish sauce to deglaze pan.
Add pumpkin, broccoli, cauliflower, tomatoes and water. Stir to combine.
Replace lid and let simmer for 15 minutes, until veggies are tender.
Remove from heat. Stir through cream, drizzle with Lemongrass & Ginger Olive Oil and serve with rice.
Optional: Top with chillies if you like extra heat!

Look at these lush bites!

𝑴𝒊𝒏𝒊 𝑴𝒆𝒓𝒊𝒏𝒈𝒖𝒆𝒔
INGREDIENTS:
• 1 egg, separated
• 75g caster sugar
• 1 tsp cornflour
• 1⁄2 tsp 𝙇𝙪𝙨𝙘𝙞𝙤𝙪𝙨 𝙈𝙖𝙣𝙜𝙤 𝙁𝙧𝙚𝙨𝙝 𝘼𝙥𝙥𝙡𝙚 & 𝙊𝙧𝙖𝙣𝙜𝙚 𝘽𝙖𝙡𝙨𝙖𝙢𝙞𝙘
• 1 Tbsp 𝘾𝙝𝙤𝙘𝙤𝙡𝙖𝙩𝙚 𝙋𝙤𝙬𝙙𝙚𝙧 of choice
• 300 ml heavy cream
• Fruit for serving
DIRECTIONS:
Pre-heat oven to 150°C. Line a baking tray and set aside.
Separate egg and beat white with a whisk or electric beaters until stiff peaks form.
Gradually add sugar continuing to beat well.
Mix Balsamic with cornflour and add to whites.
Beat in well.
Gently fold in chocolate powder using a spatula.
Place mixture into a piping bag fitted with a large nozzle.
Pipe small mounds (approx. 1 Tbsp each) onto baking tray.
Bake for 12-15 minutes.
Remove tray from oven and allow to cool on the tray.
Prepare whipping cream according to directions.
Add 1 Tbsp of Chocolate Powder prior to whipping.
Sweeten to taste.
Place mini meringues onto a serving plate.
Place a dollop of cream on each meringue and decorate with fruit.
NOTE: Recipe can be multiplied depending on how many eggs you want to use.
