It was a stunning Sunday lunch at VanillaFood for the Bush Tucker Botanical with Sunshine & Sons as part of Noosa Eat and Drink Festival.
Nilla and her team created a flavourful menu with sustainable produce including wallaby, wild-caught whole fish flavoured with native ingredients including saltbush, macadamia nuts, bush honey, lemon myrtle.
While Matt from Sunshine & Sons poured our cocktails to match including Elderflower power gin and tonic with pomegranate and rosemary and we rounded out the day with Nil Desperandum Black Rum on ice!

We were excited to kick off Noosa Eat & Drink 2024 by attending the SOLD OUT Local Love Lunch at Peregian Beach Hotel.
PBH Head Chef Matt Holt showcased his favourite native ingredients, expertly crafted in collaboration with Paul from Noosa Natives, into innovative Asian fusion dishes.

This method of distillation involves placing the spices and botanicals above the base spirit whilst it is being heated. In this process, it is the vapour that is getting infused with the aromatic compounds rather than the liquid itself.
