Underground of the Arena of Spartacus in Capua. I spoke about this on the latest episode of the Wood Fired Oven 🎧🎙️podcast. I visited this the following day after visiting Caiazzo, on my way back to Rome. I recorded the water dripping from the floor of the arena.

Spartacus trained on this ground and led a rebellion against Rome. This is living history. It’s quite something to see, to feel and to be present with.

So excited to visit in soon. I’m going to share my experience and journey with you on the Wood Fired Oven podcast soon after.

If you didn’t know, is considered one of the world’s best pizzaiolos! He is famous for his unique dough, completely kneaded by hand, with amazing creative ingredients that celebrate and reinvent the classical Italian 🇮🇹 recipes.

For me, this is part of my journey this season on the Wood Fired Oven 🎙️🎧podcast to learn what I can about pizza, by experiencing the world’s best. I’m hoping to make the Neapolitan pizza making process less intimidating for me in my wood fired oven at home in Brisbane 🇦🇺 🙂 🔥🔥

Thyme is one of my favourite herbs hands down… maybe sage come close. Kinda like smoking foods in the - and have experienced dried and smoked thyme today in 🇮🇹. Absolutely magnificent. Actually it was in a but the flavour profiles were something else.
