Left over barley, pumpkin, spinach and goats cheese salad - this was seriously good!!

Itโ€™s dinner time ๐Ÿคค

Tonight we had homemade meat balls and a vegetable loaded sauce.

Ingredients:
Meatballs:
1kg mince
2 eggs
Bread crumbs
Italian herbs
Mixed well and round into small balls using hands.
Brown in pan first, then set aside.

Pasta sauce:
Passata
Onion (sliced)
Garlic (4 cloves diced)
1 zucchini (grated)
Mushrooms (sliced)
Oregano
Powdered beef stock
Butter
Ad meat balls, leave to simmer for 10-20 minutes.

Pasta
I wish I had time to make it!
1 packet as required.

Through it all together and wallah!
I also grated some fresh Parmesan cheese to go on top ๐Ÿง€
Served with some fresh sourdough with garlic butter.
