MANGO CAKE

INGREDIENTS

1 ¾ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
½ cup milk

For the mango filling:
2 ripe mangoes, peeled and diced
1/4 cup sugar
1 tablespoon cornstarch
1/4 cup water

For the frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons milk

For the decoration:
Fresh mango slices
Whipped cream
Edible flowers or sprinkles

INSTRUCTIONS

● Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
● In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
● Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
● Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely before frosting.

Make the mango filling:

● In a saucepan, combine diced mango, sugar, cornstarch, and water.

1/4 cup red onion, thinly sliced
1/4 cup crumbled feta cheese
For the Creamy Tzatziki Sauce:

1/2 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess moisture
1 clove garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh lemon juice
1 tablespoon olive oil

Directions:
