Support our 2023 Hajj Fundraiser and enjoy a warm cuppa tea and delicious cakes whilst listening to Hajj Stories of yesteryear.
The event is indoors so no need to worry about the cold weather or rain.
Tea room open at 11am and Hajj Stories starts at 13:30.

The president announced that the country will move to adjusted alert level 2 lockdown which include the following:
The hours of curfew will be extended, running from 23:00 until 04:00.
Non-essential establishments, like restaurants, bars, and gyms, will be required to close at 22:00.
Gatherings will be permitted subject to limitations on size and health protocols, including religious, social, political, and cultural gatherings.
The maximum number of people allowed for indoor gatherings are limited to 100 people. Outdoor gatherings are restricted to 250 people.
Smaller venues will only be allowed to accommodate 50% of their maximum capacity.
Funerals are limited to 100 people and 2 hours.
Night vigils and gatherings where people drink alcohol or play music after a funeral will not be allowed.
The wearing of masks remains compulsory in all public spaces. It is a criminal offence not to do so.

With the cold weather keeping us indoors, the best way to keep warm and stay healthy is to have a hearty meal. Thanks to Fatima Sydow Cooks we can all now cook some nutritious Split Pea Soup. Feel free to share your soup recipes with us.
INGREDIENTS
•500 gr (2 & ½ cups) of dried split peas
• 4 marrow bones
• 2 medium onions peeled and grated
• 4 large carrots peeled and grated
• 1 cups worth of chopped soup celery
• 4 cloves
• 2 tsp (10ml) of salt
• 1 tbsp. (15ml) of freshly ground black
pepper.
DIRECTIONS
• In a large pot add your split peas, marrow
bones, cloves and a litre of hot water and cook
on medium to high heat until your split peas
are soft and mushy. Next add the rest of your
ingredients and a litre of hot water.
• Cook on medium heat for 35 to 40 minutes.
• Throughout the cooking process make sure to
stir the soup when needed to prevent sticking
to the bottom of the pot.
• Serve on its own or with delicious fresh bread with a spread of butter.

With Eid on our doorstep, we cook and bake for the feast. Fatima Sydow Cooks gives us the chance to celebrate the day with some of her beautiful Chocolate Queen Cupcakes. Feel free to Share the recipe and let us know what desserts you will be preparing for Eid.
Course: Dessert
Chocolate Queen Cupcake
INGREDIENTS
• 250 g butter
•1 cup castor sugar
• 4 eggs
• 1 cup buttermilk
• 2 tsp vanilla
essence
• 1 tsp instant coffee
mixed with 4 tbsp.
warm water
• 3 tsp baking
powder
• 4 heaped tbsp of
cocoa powder
• 2 cups flour
SWEET VANILLA CREAM
• 250 ml fresh cream
• 2 tsp vanilla essence
• 3 tbsp icing sugar
• berries and mint leaves for decorating
DIRECTIONS
• Preheat the oven to 180°. Grease 2 muffin trays with butter or use cooking spray.
• In a large bowl, beat the butter and sugar until light and creamy. Add the eggs and vanilla
essence and beat until light and fluffy. Sift in all the dry ingredients, add the buttermilk and
coffee mixture and blend until just combined. Spoon the mixture into the muffin trays.
• Bake for 20-25 minutes until done. Allow to cool for a few minutes. Remove from the pan and transfer to a wire rack to cool completely.
• For the sweet vanilla cream, whisk the cream till almost stiff, add the vanilla essence and icing sugar and beat until stiff peaks form. Cut the cooled cakes in half and pipe the cream on the bottom half and top with the other half to join the cake.
• Pipe the cream on top of the cake and decorate with a slice of strawberry and a mint leaf. For extra effect, just before serving, dust with icing sugar.

As we enter the last 10 days of Ramadaan, we're reminded of the blessings of this auspicious month. We're also grateful to have a meal on our table and with that in mind, we have gathered some delectable recipes from Salwaa Francis Smith that we would like to share with you. We would love to see pictures of your versions of this recipes in the comments.
Deconstructed Lamb Breyani
Main Course
INGREDIENTS
• 1kg lamb / mutton pieces
• Add the following to the lamb /
mutton pieces and marinate preferably
overnight in the refrigerator :
• 2 stick cinnamons
• 2 cardamom pods
• 1 bay leaves
• 3cloves
• 3 allspices
• 1 Tbsp grated ginger
• 1 Tbsp grated garlic
• 3 green chillies, deseeded and
chopped
• 2 tsp coriander
• 1 tsp coarsely crushed black pepper
• 3 tsp cumin
• 1 tsp bariship / fennel
• 2 tsp leave masala / roasted masala
• 1 – 2 tsp chilli powder
• 2 tsp garam masala
• 2 medium tomatoes sliced
• 1/4 cup of vegetable / sunflower oil
• 1 cup plain yoghurt
• ½ bunch fresh dhanya, chopped
• 2 tsp salt
• 1 large onion thinly sliced
Deconstructed Lamb Breyani
Cook the above in a pot for about
45 - 60 minutes until soft and tender
depending what kind of meat you using
adding little bits of water at a time as
needed. Take note the consistence and
texture shouldn’t be too saucy / run
For the rice:
• Cook 3 – 4 cups white long grain or basmati rice with
• 3 bay leaves
• 2 stick cinnamons
• 2 cloves
• 2 allspice
• 1 tsp whole cumin
• 1 tsp whole coriander
• 1 tsp fennel/ bariship
• 1/2 tsp of turmeric
• 2 tsp salt
• Drain and steam the rice by topping it with pieces of butter about 2 TBSP and the saffron water if you using it.
• 4 - 6 hardboiled eggs cut in half or quartets (optional) for garnishing
• 1/2 bunch of freshly chopped coriander leaves for garnishing ( optional )
• 8-10 small potatoes fried and set aside. Do this last.
• One large onion thinly sliced and fried in the same oil as you fried the potatoes until dark brown and crispy. Mix
with meat thoroughly just before serving.
• Dish your rice into a platter / platters. Cover with some meat. Garnish with chopped coriander leaves. Decorate
with fried potatoes and eggs on the side of the platters. Serve with sambals or atchars
