The Perfect Christmas in July Pairing: Crispy Roast Pork Belly with Avocado Recipe by I Love Avos

Not only do the flavours of each one complement the other, but they both share similar attributes, including nutritional density, versatility and health benefits.

Serves 8

Preparation time: 30 minutes + refrigeration

Cooking time: 2 hours

Ingredients:

FOR THE PORK BELLY
2 kg (3-4 cm thickness) boneless pork belly with the skin
2 heads garlic, broken into cloves and peeled
30 ml (2 tbsp) avocado or olive oil
60 ml (¼ cup) sea salt flakes
30 ml (2 tbsp) cumin seeds
2 handfuls sage

FOR THE AVO MUSTARD SAUCE
½ x 385 g tin condensed milk
30 ml (2 tbsp) white wine vinegar
15 ml (1 tbsp) whole grain mustard
30 ml (2 tbsp) milk
½ avocado, mashed
Salt and pepper

FOR THE SPICED AVO SLICES
15 ml (1 tbsp) smoked or plain paprika
30 ml (2 tbsp) Cajun spice
15 ml (1 tbsp) dried chilli flakes
2 avocados, halved, stoned and peeled

Method:
For the pork belly, score the pork skin 1 cm apart with a sharp knife or minora blade. Leave the pork uncovered in the fridge for at least 4 hours or preferably overnight to dry out.
Preheat oven to 180°C. Scatter the garlic over the base of a baking dish. Rub the oil all over the pork, followed by half of the sea salt flakes. Place the pork skin-side down on top of the garlic and sprinkle with cumin. Roast for 1 hour.
Increase oven to 230°C. Turn the pork over and sprinkle with remaining salt. Tuck the sage in underneath the pork and roast for about 1 hour or until the skin is golden and crunchy (cover pieces that browns too much with foil).

For the sauce, blitz together all the ingredients. Season with salt and pepper.
For the spiced avo slices, combine the paprika, Cajun and chilli flakes. Press the avo halves, cut side down into the spice mix. Thickly slice. Serve with the pork and sauce.

Eat your Beans Day is celebrated on 3 July every year and is the perfect opportunity to appreciate the nutritional powerhouse that beans are.

They are a significant source of protein, complex carbohydrates, folate, fiber, and iron. Complementing the beans in this recipe, mushrooms add a rich, umami flavor and come packed with their own set of nutritional benefits, including all nine essential amino acids, Vitamin Bs, and essential minerals like iron, phosphorus, copper, potassium, and selenium.

To celebrate this day, MushroomsSA crafted a scrumptious Vegan Lentil & Mushroom Stew on Butter Bean Mash. Serves 6

Ingredients:
1 ½ cups brown lentils
5 cups mushroom stock
1 bunch fresh thyme sprigs
1 onion, diced
500g Portabellini mushrooms, sliced
4 cloves garlic, thinly sliced
2 Tbsp tomato paste
½ tsp dried chilli flakes
1 x 400g tin diced tomatoes
Olive oil
Salt and pepper, to taste

Butter bean mash:
2 x 400g tins of butter beans, rinsed & drained
1 small clove garlic, grated finely
2 Tbsp lemon juice
4 Tbsp / 60ml olive oil
Salt & pepper, to taste
Chopped parsley or micro herbs, for serving

Method:
To make the mash, add all the ingredients to a food processor.
Blitz until completely smooth, adding a little water if you want to thin it out.
To warm up – transfer to a saucepan over low heat and stir until warmed through. Taste to adjust seasoning.

For the lentil stew:
Rinse lentils well. Place in a large pot or Dutch oven and add the mushroom stock and thyme.
Bring to a boil, then reduce to a simmer. Cook with lid ajar for about 25 minutes until tender. If you need to give them a little liquid top up add some boiling water from the kettle.
Discard the thyme sprigs.
Meanwhile, heat a drizzle of olive oil in a large sauté pan.
Add onion and mushrooms. Season lightly and cook until the onion softens and mushrooms are golden. Add garlic, tomato paste and chilli flakes. Cook until tomato paste turns a deep dark red colour and smells sweet.
Pour in the tinned tomato and deglaze the bottom of the pan.
Add the cooked lentils & all their liquid. Mix everything together.
Taste to adjust seasoning
Serve stew on warmed butter bean mash; sprinkle with micro herbs.

Double Avo and Sticky Chicken Burger
Serves 4
Preparation time: 25 minutes
Cooking time: 30 minutes

Ingredients:

FOR THE PINEAPPLE CHUTNEY
• 1 pineapple, cored and finely chopped
• 125 ml (½ cup) castor sugar
• 60 ml (¼ cup) white wine vinegar
• 10 ml (2 tsp) chilli flakes

FOR THE MARINATED ONIONS
• 1 red onion, thinly sliced into rings
• 80 ml (⅓ cup) white wine vinegar
• 5 ml (1 tsp) castor sugar

FOR THE BURGERS
• 4 chicken breasts, butterflied
• Olive or avocado oil to drizzle
• Salt and pepper
• 60 ml (¼ cup) sweet chilli sauce
• 4 hamburger buns, cut open
• 2 avocados

Method:
1. For the pineapple chutney, combine all the ingredients in a small saucepan over medium heat and simmer, stirring occasionally for about 30 minutes or until most of the liquid has evaporated.
2. For the marinated onions, combine all the ingredients and marinate for at least 20 minutes. Drain.
3. For the burgers, heat a griddle pan on high. Rub the chicken with oil and season with salt and pepper. Cook in batches for about 3 minutes each side or until cooked. Spread with sweet chilli sauce.
4. Drizzle the cut sides of the buns with oil and cook, cut side down, on the griddle pan until charred.
5. Roughly crush 1 of the avocados with a fork. Season with salt and pepper. Spread over the bun bases. Top with the chicken. Slice the remaining avo and place on the chicken. Season with salt and pepper. Top with the chutney, onions and bun tops.

It is only right that one of South Africa’s most iconic dishes , the Bunny Chow, has been recognised world wide with the annual World Bunny Chow Day which is celebrated on June 26.

Luckily we all know that no real furry bunnies are involved, that it humbly originates from Durban’s Indian community and that its taste is uniquely spicy and flavoursome.

Naturally the Bunny Chow has evolved a bit over the years and can be found in a fancy hollowed out sourdough boule bread accompanied by an equally fancy wine but in its most common form it’s simply a hollowed out white government loaf of bread elevated by the aromatic and often fiery curry it holds!

Cook up a storm for dad this Father's Day with this delicious Mushroom & Sausage Baked Gnocchi by MushroomsSA ; serves 6-8

INGREDIENTS
• ± 450g sausages of choice
• 500g portabellini mushrooms, sliced
• 1 large onion, diced
• 4 cloves garlic, minced
• Pinch of chilli flakes
• 1 x 400g tin diced tomatoes
• 250ml stock
• Handful basil leaves, roughly chopped
• 200g fresh spinach / Swiss chard
• 500g store bought gnocchi
• 100g mozzarella, grated
• 100g parmesan, grated
• Fresh basil, for garnish
• Salt and pepper, to taste
• Olive oil, for cooking

METHOD
Preheat air fryer to 180˚C.

Place sausages in the air fryer and cook for ± 8 minutes for a chunky lamb/beef or pork sausage.
Set aside to cool and then cut into chunky slices.

Heat a drizzle of olive oil in a large oven safe saucepan.
Add the mushrooms and cook until golden.
Remove and set aside.

To the same pan add the onion and cook until tender.
Add the garlic and chilli flakes.
Cook for a minute until fragrant.
Pour in the tomatoes and the stock.
Bring to a simmer and cook for a few minutes while you prepare the gnocchi.

Bring a large saucepan of salted water to the boil.
Cook the gnocchi according to package instructions then drain.

Add gnocchi to the pan of sauce along with the mushrooms, sausage, basil and spinach.
Mix well and taste to adjust seasoning.

Preheat oven to 220˚C degrees.
Scatter the top of the saucepan with mozzarella and then parmesan.
Bake for 10-15 minutes until the cheese is golden and bubbling.

Serve hot out of the pan with a crisp green side salad and enjoy!

Mushroom Loaded Parathas Recipe by MushroomsSA : A fresh style loaded paratha with mushrooms, peas and mozzarella.

INGREDIENTS
• 8 parathas (homemade or store bought)
• 250 g portabellini mushrooms, sliced
• 1 tbsp curry powder
• 1 cup peas, fresh or frozen
• ½ cup fresh coriander, roughly chopped
• ½ cup spring onions, finely sliced
• 1 fresh chilli, seeds removed and diced
• 200 g mozzarella cheese, grated
• Salt and pepper, to taste
• Ghee or olive oil, for cooking

INSTRUCTIONS

Heat a spoonful of ghee or a drizzle of olive oil in a frying pan. Cook mushrooms with curry powder and season. Once they are golden brown set aside.

Blanch peas in boiling water. Drain and place in a large bowl. Mash peas roughly using a fork. Add the coriander, spring onion, fresh chilli and mozzarella. Mix and season.
Stir through the curried mushrooms.

Cook parathas according to package instructions. Once lightly golden brown on both sides, place on a board. Spoon the mushrooms filling evenly onto 4 of the parathas.

Sandwich them closed with the other Return each stuffed paratha to the frying pan on medium-low heat. Cook on both sides until golden brown and the cheese has melted.

Slice and serve!

For just R110 each, enjoy a delectable meal from a Light Lunch Menu. Here's what's cooking:

🥩 Rump - 200g of twenty one day wet aged cut of rump, grilled to your preference.

🐟 Good Old Fish and Chips - Choose from grilled or beer battered hake, served with tartar sauce.

🍖 Pork Belly - 130g rolled pork belly, stuffed with wholegrain Dijon mustard, fresh garlic, and black pepper, accompanied by caramelised apple and an orange juice, honey, and cinnamon reduction.

🍗 Deboned Chicken - Flame grilled to perfection in either peri peri or lemon and herb.

🍕 Pepperoni Pizza - Classic pizza topped with mozzarella and pepperoni.

🍝 Chicken and Mushroom Pasta - Creamy chicken and mushroom pomodoro pasta.

🍆 Melanzane - Delicate layers of lightly roasted aubergine with homemade napolitana sauce, mozzarella, and grated parmesan, all gratinated to a golden brown.
