Five Fresh, Vibrant Recipes for a Christmas Feast

Christmas lunch under a South African sun calls for colour, freshness and flavours that feel alive. One of our favourites from Capsicum’s festive lineup is this bright Citrus and Herb Roast Chicken with Summer Salsa. It’s light, juicy and perfect for a warm family gathering where the kitchen shouldn’t steal the whole day.

Citrus & Herb Roast Chicken with Summer Salsa
Serves 6

Ingredients
For the chicken:
• 1 whole chicken (1.8–2 kg)
• 2 tbsp olive oil
• 2 tbsp butter, softened
• Zest of 1 lemon + 1 orange
• 4 garlic cloves, minced
• 1 tbsp fresh thyme leaves
• 1 tbsp chopped rosemary
• Salt and pepper
• 1 lemon, quartered

For the summer salsa:
• 1 mango, diced
• 1 cup pineapple, diced
• ½ red onion, finely chopped
• 1 small cucumber, diced
• 1 red chilli, finely chopped (optional)
• Juice of 1 lime
• Small handful of coriander or mint, chopped

Method

Heat oven to 200°C. Pat the chicken dry.
Mix the olive oil, butter, citrus zest, garlic, herbs, salt and pepper, then rub all over the chicken, including under the skin.
Place lemon quarters in the cavity and roast for about 75 minutes or until the juices run clear. Rest for 10 minutes.

For the salsa: Combine mango, pineapple, onion, cucumber, chilli, lime juice and herbs.

Spoon the salsa over the chicken before serving.

• Give younger children a small amount (even R50 or R100) to manage during the holiday. It teaches wants vs needs, budgeting and change.

• Let older children help plan a budget for gifts, outings or back-to-school costs. Real choices make lessons stick.

• Make shopping educational: compare prices, look at unit costs and talk through value.

• Introduce digital money early. Show them how balances, fees and spending limits work.

• Use December to review your own safeguards: medical aid, life cover, short-term insurance and a valid will.

These small, calm conversations build lifelong skills without pressure or overwhelm.

There are only a few days left of the school holidays, and the Two Oceans Aquarium is putting penguins in the spotlight. Don’t miss your chance to enjoy a full line-up of penguin-themed activities, from daily feeding sessions to creative crafts and puppet shows.

Each day, three lucky visitors will be randomly selected to join the Penguin Keepers during feeding time, a rare opportunity to get up close with the African penguins. Younger children can still enjoy spot prizes, face painting, and fun from the sidelines.

The Children’s Play Centre is hosting penguin-themed crafts, and puppet shows run daily at 10:30, 13:30, and 15:30, featuring Peter the Penguin.
