It was an absolute honor and privilege to have participated in the Gina cooks cooking demo "cooking with citrus"
For someone who worked under a celebrity as big as Jamie Oliver for 12 years, Gina is the most down to earth friendly person and I have huge respect for her.
We started off the event making Biscotti, Gina provided us with the recipe and basic ingredients and told us to flavor it however we wished,
I ended up making a dark chocolate, orange zest, walnut and cranberry Biscotti
We then moved onto a locally sourced Eastern cape Rum cocktail, again Gina put out a bunch of ingredients and told us to get creative.
I used cherries, an orange slice and some pineapple pieces followed by a heart "eyeballing" of Rum and topping it off with orange juice.
Then Gina had made fresh flour tortillas for us and we used it to make fresh hake fish tacos with a citrus greek yogurt
sauce and an avocado, tomato and red onion salsa. In full confession i've never had a taco but this was absolutely delicious
I can see why tacos are one of Americas favorite snacks.
Our last savory meal Gina got up at 3 AM to start marinating! Absolute dedication to make sure we had a fantastic time with great food,
we had a citrus, rosemary and garlic marinated lamb neck (that marinated for 8 hours) accompanied by a fresh zesty homage pesto and a salad
with whole citrus pieces.
To finish off our wonderful morning we where served a citrus cake with a lemon ice cream.
I just want to thank Gina for an amazing experience and for being such a down to earth, accommodating and fun filled person. Also a special
thanks to her family to helped her make the morning a success and keep everyone entertained.
