Whats for dinner as heard on the PowerMix on Mix 93.8 FM

Slow cooked leg of lamb

Cooking time ... about 7 hours 100°c

Ingredients:
Leg of lamb (Bone in) +-3kg
Olive oil
Head of garlic
4x stalks celery
4x stalks rosemary
Corse salt
Black pepper
Stock to cover veggies 60%
1x Brown onion
2 cups baby carrots
1 orange

Method

*Cut orange in to 4
*Chop celery
*Peel and quarter your onion
Place all your veggies in to a deep oven roasting pan (deep enough to either foil closed or to put a lid on

Using olive oil.. massage the lamb until the whole lamb is glistening.

Spread your veggies well and place the lamb roast on top of the bed of veggies skin side up

Add the rosemary next to the lamb on all four sides

Salt your lamb with a pinch of salt and grind fresh black pepper

Turn the lamb back over (Bone side up) - repeat salt and pepper

Add your stock in to the pan covering just over 1/2 of your veggies

Cover your roasting pan with foil or a lid, pop it in to the oven and leave for 6 hours at 100°c

Pop it out after 6 hour.. take off the foil or lid

Turn your lamb over skin side up and baste it with the drippings in your pan.

Pop it back I the oven uncovered @160° and Roast for a further 35 to 40 minutes and continue basting every 10 minutes or so until golden brown with a crisp crust.

Once done ... take the roast out of the oven.. no need to carve .. the meat will be so tender you can just pull it from the bone.

Remember to use your pan drippings for a gravey

Serve with a bed of rice and your favorite veggies and don't forget roast potatoes!
