Drunken Lobster Tail Skewers

Ingredients:

4 lobster tails
1/4 cup fresh lemon juice
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh cilantro, chopped
1 teaspoon paprika
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Lemon wedges, for serving

Directions:

Prepare the Lobster Tails:

Using kitchen shears, cut down the top shell of each lobster tail, stopping at the base of the tail.
Gently pull the lobster meat out of the shell, leaving the end attached, and lay it on top of the shell.
Marinate the Lobster:
In a large bowl, combine the white wine, fresh lemon juice, minced garlic, chopped parsley, chopped cilantro, paprika, red pepper flakes (if using), salt, black pepper, and olive oil. Mix well.
Place the lobster tails in the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Prepare the Skewers:
Preheat your grill to medium-high heat.
Remove the lobster tails from the marinade and thread them onto skewers. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
Grill the Lobster Tails:
Place the lobster skewers on the preheated grill.
Grill for 5-7 minutes per side, or until the lobster meat is opaque and cooked through, basting occasionally with the remaining marinade.

Serve:

Remove the lobster skewers from the grill and let them rest for a few minutes.

Rotel Tacos are a quick and flavorful meal that combines the savory taste of seasoned ground beef with the spicy kick of Rotel tomatoes and green chilies.

Ingredients:

1 pound ground beef
1 (10 ounce) can Rotel tomatoes and green chilies, undrained
1 packet taco seasoning mix
12 taco shells
Your favorite taco toppings, such as:
Shredded lettuce
Shredded cheese
Sour cream
Guacamole

Instructions:

Cook the Ground Beef:
In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.

Add Rotel and Seasoning:

FRIED APPLE or PEACH PIES

Ingredients:

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold butter, diced
- 1/2 cup ice water
- 4 large apples, peeled, cored, and diced
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- Vegetable oil for frying
- Powdered sugar for dusting

Directions:

1. In a large bowl, mix flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
2. Gradually add ice water, mixing until the dough forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.
3. In a medium saucepan, combine apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until apples are tender, about 10 minutes. Remove from heat and let cool.

Ingredients:

• 1 lb lean ground beef
• 1 cup Nacho Cheese Sauce
• ½ cup sour cream
• 1 can Rotel (green chilis with diced tomatoes)
• ½ cup chopped green peppers
• ½ cup diced onions
• 1 packet Taco Seasoning Mix
• Nacho Cheese flavored Doritos, crushed
• 4 flour tortilla wraps
• Shredded lettuce

Directions:

1. Brown the ground beef in a skillet and drain any excess fat.
2. Add onions and peppers, and sauté for 4 minutes.
3. Stir in the taco seasoning packet.
4. In a separate bowl, mix Rotel and Nacho Cheese Sauce together.
5. Place four tortillas on a flat surface.
6. Spoon a layer of the Nacho Cheese mixture down the center of each tortilla.
7. Top with the meat mixture, sour cream, onions, peppers, and crushed Doritos.
8. Fold in the sides of the tortillas and roll up like a burrito.
9. Heat a skillet over medium heat.

Ingredients:

1 cup unsalted butter, room temperature
1 cup granulated sugar
4 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup mixed dried fruit (raisins, currants, chopped apricots, etc.)
1/2 cup chopped nuts (walnuts, pecans, etc.)
1/2 cup orange juice

Directions:

Preheat oven: 325°F (165°C). Grease and flour a 9x5-inch pan.
Cream butter and sugar: In a large bowl, combine butter and sugar until light and fluffy.
Blend eggs and vanilla: Beat in eggs one at a time, then stir in vanilla.
Combine dry ingredients: In a separate bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

LOBSTER TAIL RECIPE (FAST & EASY!)

INGREDIENTS:

4 10-oz Lobster tails (or see instructions for other sizes)
1/4 cup Salted butter (melted; 1/2 stick)
2 cloves Garlic (crushed)
2 tsp Lemon juice
1/2 tsp Smoked paprika
1 pinch Cayenne pepper

INSTRUCTIONS:

If tails are frozen, thaw them overnight in the fridge, or in a bag submerged in cold water on the counter for about 30 minutes.
Preheat the oven to Broil (500 degrees F or 260 degrees C). Set the oven rack such that lobster tails placed on a baking sheet would be 4 to 5 inches away from the broiler.
Butterfly the lobster tails. Using kitchen shears, cut down the center of the shell lengthwise, starting from the end opposite the tail fins, continuing down until you reach the tail but without cutting the tail. You want to cut through the top of the shell, but don't cut through the bottom shell. Use your thumbs and fingers to spread open the shell on top, then gently pull the lobster meat upward, separating it away from the bottom shell, leaving the end attached to the tail fin intact. Slightly push together the empty shell underneath and place the row of meat on top. Place the butterflied lobster tail onto the baking sheet. (See the post above for a visual of this process.)
In a small bowl, whisk together the melted butter, garlic, lemon juice, smoked paprika, and cayenne. Brush the butter mixture over the lobster meat.
Broil the lobster tails until the meat is opaque and lightly browned, about 1 minute per ounce of individual tail. (For example, broil 10-ounce lobster tails for 10 minutes or broil 5-ounce tails for 5 minutes.)

Ingredients:

1 lb ground beef
2 large onions, thinly sliced
2 tablespoons butter
1 teaspoon sugar
1/2 cup beef broth
2 tablespoons Worcestershire sauce
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Salt and pepper to taste
4 slices of Gruyère or Swiss cheese
4 hamburger buns
1 clove garlic, minced (optional for garlic butter buns)
Additional butter for buns

Directions:

Caramelize the Onions:

In a large skillet over medium heat, melt the butter.
Add the sliced onions and sugar, cooking and stirring occasionally until the onions become deeply caramelized and sweet, about 20-25 minutes. If the onions start to stick, deglaze the pan with a splash of beef broth.
Prepare the Burger Patties:
3. Season the ground beef with salt, pepper, and Worcestershire sauce. Form the mixture into 4 equal-sized patties.
4. In a separate skillet or on a grill, cook the burger patties to your desired level of doneness.

Assemble the Burgers:

5. If desired, prepare garlic butter buns by mixing butter with minced garlic, spreading it on the buns, and toasting until golden.

Rotel Cream Cheese Sausage Balls

Ingredients:

1 lb hot sausage, uncooked
1 (8 oz) package cream cheese, softened
1 (10 oz) can Rotel diced tomatoes and green chilies, drained
1¾ cups Bisquick baking mix
1 cup shredded cheddar cheese

Directions:

Preheat oven to 400°F (200°C).
In a large mixing bowl, combine the uncooked sausage, softened cream cheese, and drained Rotel.

Directions:

Standing Rib Roast

Ingredients:

- 3 teaspoons paprika
- 2 teaspoons garlic salt
- 1-1/2 teaspoons pepper
- 1 teaspoon dried rosemary, crushed
- 1/2 teaspoon cayenne pepper
- 1 bone-in beef rib roast (6 to 7 pounds)
- 2 cups beef stock

Directions:

1. Preheat your oven to 350°F.
2. In a small bowl, mix together the paprika, garlic salt, pepper, rosemary, and cayenne pepper to make a dry rub.
3. Rub the dry rub all over the beef rib roast, covering it completely.
4. Place the rib roast in a roasting pan bone side down.
5. Pour the beef stock into the bottom of the roasting pan.
6. Roast the rib roast in the preheated oven for about 2-2.5 hours, or until a meat thermometer reads 135-140°F for medium-rare or 145-150°F for medium.

Chicken Scampi with Garlic Parmesan Rice

Ingredients:

For the Chicken:

1 pound boneless, skinless chicken breasts, sliced into thin strips
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
Juice of 1 lemon
1/4 cup white wine (optional)
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley

For the Garlic
Parmesan Rice:

1 cup long-grain white rice
2 cups chicken broth
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Chopped fresh parsley, for garnish

Directions:

For the Chicken:

1. Season the chicken strips with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat.
3. Add the seasoned chicken strips to the skillet and cook for 3-4 minutes per side until golden brown and cooked through.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
6. Pour in chicken broth, lemon juice, and white wine (if using), scraping up any browned bits from the bottom of the skillet.
7. Simmer for 3-4 minutes to reduce the liquid slightly.
8. Stir in butter until melted and well combined.

An hour and a half to two hours in the oven is replaced by just 35 minutes in the air fryer! Crispy on top and fall off the bone tender!!

DRY RUB RIBS

Ingredients:

1 tablespoon ground cumin

1/2 teaspoon ground paprika

1/2 teaspoon garlic powder

1 teaspoon chili powder (more if you like spicy)

1 tablespoon brown sugar

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

2 teaspoons Liquid Smoke (this stuff is fantastic on ribs!)

1 rack of baby back ribs “beef ribs”

Instructions:

In a small bowl, mix your spices, liquid smoke, and olive oil.

Rub it all over the ribs.

Place your ribs into the air fryer. The good thing about cooking ribs in your air fryer is that they can be cut to fit into your air fryer.

Set the temperature to 400 degrees F (air fryer setting) for 20 minutes. After 20 minutes, use a meat thermometer to check and make sure the ribs are fully cooked.

If not, add a few minutes until the internal temperature shows that the ribs are cooked.

Mozzarella Onion Rings

Ingredients:

• 2 large white onions
• 3 slices mozzarella cheese
• 2 cups flour (250 g)
• 5 eggs, beaten
• 2 cups breadcrumbs (230 g)
• Oil for frying
• Marinara sauce for dipping

Directions:

1. Prepare the Onion Rings:
• Peel the onions and cut them into 1-centimeter (½ inch) rings.
• Separate the rings carefully.
• Slice the mozzarella into 4 even strips.
• Take a smaller onion ring and place it in the center of a larger one. Fill the gap between the rings with the mozzarella strips.
• For an extra cheesy kick, you can add another layer of cheese.
• Repeat this process with the remaining onion rings and then freeze them for about 1 hour.

2. Coat the Rings:
• Prepare three separate bowls with flour, beaten eggs, and breadcrumbs.
• Take each prepared onion ring and coat it first in flour, then dip it into the beaten eggs, followed by the breadcrumbs.
• For an extra crispy coating, dip the rings back into the beaten eggs and breadcrumbs one more time.
• Repeat this process for all the onion rings and then place them back in the freezer.

3. Fry the Rings:
• Heat oil in a large pot over medium-high heat until it reaches 350˚F (175˚C).
• Carefully place the coated onion rings into the hot oil and fry them until they turn golden brown.
• Be mindful not to fry them for too long, as the cheese may start to ooze out completely.

4. Serve:
• Once fried to perfection, remove the onion rings from the oil and drain them on a paper towel to remove excess oil.

BUTTER, GARLIC AND LEMON BAKED TILAPIA

" Perfect, look what I found in my fridge "

Tilapia makes an easy “any night” dinner for a few reasons. It is inexpensive, easy to prepare and has a mild flavor. From Mexican to Italian, Tilapia can be prepared in a variety of ways and it even works great for a fish fry. Today I’m keeping things really simple with butter, garlic, lemon and just a hint of smoky, sweet paprika. If you prefer a bit of heat in your meal, then swap out the paprika for a bit of red hot chili pepper.
Butter gives a very delicious taste to this dish, but if you are trying to be health-conscious, you can replace butter with olive oil or even coconut oil. The taste will be very different but I assure you it will still be delicious. I even like this recipe with the addition of capers and a bit of white wine. The briny saltiness of the capers goes nicely with the richness of the butter. You can experiment and adjust this recipe any way you like to suit your family. Once in the pan, it’s 15 minutes in the oven and ready for your table.

Ingredients:

1/4 cup unsalted butter, melted
3 cloves garlic, minced
2-3 Tbsp. freshly squeezed lemon juice, or more, to taste
1 tsp. sweet paprika or for a bit of spice add red chili powder.
Zest of 1 lemon
4 (6 oz.) tilapia fillets
Kosher salt and freshly ground black pepper, to taste
2 Tbsp. fresh parsley leaves, chopped

Instructions:

Wash the tilapia fillets and pat them dry.
Arrange the fillets in a baking dish.
Mix lemon juice, butter, garlic, paprika or red chili powder, salt and black pepper in a bowl.
Pour this mixture over the tilapia.
Arrange lemon slices in between the fillets.
Preheat the oven to 375°F and bake the fish for 15-20 minutes. Do not overcook the fish or it will dry out.
Garnish with fresh parsley. Use the pan drippings to pour over the fish fillets once you have served it on the plate.

Chicken Chow Mein

Ingredients:

1 pound boneless, skinless chicken breasts, thinly sliced
2 tablespoons vegetable oil
2 cups chow mein noodles, cooked according to package instructions
1 bell pepper, julienned
1 medium carrot, julienned
1/2 cup cabbage, shredded
1 onion, sliced
2 cloves garlic, minced
1/4 cup soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1/2 cup chicken broth
Fresh green onions and sesame seeds for garnish

Directions:

Heat the vegetable oil in a large skillet or wok over high heat.
Add the chicken slices and stir-fry until browned and cooked through, about 5-6 minutes. Remove chicken from the pan and set aside.
In the same pan, add a bit more oil if necessary, and sauté the garlic and onions until translucent.
Add the bell pepper, carrot, and cabbage to the pan. Stir-fry for about 2-3 minutes until just tender but still crisp.
Return the chicken to the pan. Add the cooked chow mein noodles.
In a small bowl, whisk together soy sauce, sesame oil, sugar, and chicken broth. Pour this mixture over the noodles and vegetables in the pan.
Toss everything together and stir-fry for an additional 2-3 minutes, making sure the sauce evenly coats all the ingredients.
Serve the chow mein garnished with chopped green onions and a sprinkle of sesame seeds.

HIBACHI AT HOME. ALSO CHINESE FRIED RICE AND DELICIOUS MAYO SAUCE
EASY TO MAKE !!!

Steak sauce:
1/4 cup soy sauce
2 tbsp white vinegar
1 tbsp sugar
2 cloves minced garlic
1.5 tsp fresh grated ginger
1/2 tsp pepper

Lightly season steak cut into bite sized pieces with salt and pepper. Over medium high heat add steak and cook until browned approximately 1-2 minutes on each side and remove from heat. Add in sauce and add steak back in, allowing it to coat the steak and thicken.

Shrimp sauce:
1/4 cup soy
2 tbsp brown sugar
3 cloves minced garlic
1/2 tsp red pepper flakes
Dash of sriracha, optional but recommended
1 tbsp cornstarch

Lightly season shrimp with salt, pepper and some paprika. Add a little olive oil.

Over medium high heat add a little oil and cook shrimp on each side approximately 2-3 minutes until shrimp make a nice c shape and remove from heat. Add in sauce and shrimp until sauce adheres to shrimp. Remove from heat.

Broccoli and onions:
Sauce:
1/4 cup soy
2 tbsp brown sugar
1/2 tsp red pepper flakes
1 tsp oyster sauce
1 tbsp cornstarch

Over medium high heat add a little oil to pan. Add in onions and cook until they begin to soften then add in your broccoli and cook for approximately 4-5 minutes, stirring frequently so they don’t burn. Lower heat to medium low and add In sauce, cooking another 2-3 minutes until sauce thickens.

Fried rice:
3 cups cooked day old cold rice
1 cup frozen peas and carrots
1/2 onion chopped
3 tbsp soy sauce
2 tbsp brown sugar
1 tsp oyster sauce
2 eggs lightly beaten
1 green onion chopped and screwed
2 tbsp oil

Over medium high heat add oil to skillet or wok and add in onions, peas and carrots cooking until tender.

Push ingredients to one side and add in eggs and scramble them. Push those aside also. Add in rice. Add in soy sauce. Next add in sugar and oyster sauce. Stir up all the ingredients and toss in green onions.

Homemade yum yum sauce:

1 cup mayo
2 tbsp tomato paste
1 tbsp rice vinegar
1/4 tsp salt
1/4 tsp pepper
1 tsp smoked paprika
1 tsp sugar
1 tsp garlic powder
1 tbsp melted butter
2 tbsp water

Cheesy Garlic Bread Shrimp Grilled cheese

Ingredients:

For the Garlic Bread:
1 loaf French bread, sliced in half lengthwise
4 tablespoons butter, softened
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon chopped parsley
For the Shrimp Filling:
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon paprika
For the Sandwich:
1 cup shredded Monterey Jack cheese
Additional butter for grilling

Directions:

Prepare the Garlic Bread:
Preheat your oven to 375°F (190°C).
In a small bowl, mix together the softened butter, minced garlic, Parmesan cheese, and parsley.
Spread the garlic butter mixture evenly on each half of the French bread.
Place on a baking sheet and bake for 10-12 minutes, or until the edges are golden and crispy.
Cook the Shrimp:
Heat olive oil in a skillet over medium heat.
Season the shrimp with salt, pepper, and paprika.
Cook the shrimp for 2-3 minutes on each side, or until pink and cooked through. Remove from heat.
Assemble the Sandwich:
On one half of the garlic bread, layer the cooked shrimp and sprinkle with Monterey Jack cheese.
Place the other half of the bread on top, and press down gently to adhere.
Heat a skillet over medium heat and add a bit of butter.
Carefully place the sandwich in the skillet and grill until the cheese is melted and the bread is toasted, about 3-4 minutes per side.
Cut into portions and serve hot.

Easy Fried Cheese Bites

Ingredients:

- 1 lb mozzarella cheese, cut into 1-inch cubes
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
- Marinara sauce, for dipping

Directions:

1. Set up a breading station with three shallow bowls. Place the flour in the first bowl, beaten eggs in the second bowl, and a mixture of breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper in the third bowl.
2. Coat each mozzarella cube first in the flour, then dip in the beaten eggs, and finally roll in the breadcrumb mixture, ensuring each piece is fully coated. Repeat the process for all the cheese cubes.
3. Place the breaded cheese bites on a baking sheet and freeze for at least 30 minutes to firm up.
4. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
5. Fry the cheese bites in batches for 1-2 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
6. Serve the fried cheese bites hot with marinara sauce for dipping.
