I woke up today and realized it’s been over four years since I drank alcohol.

I decided to take a pause on drinking in 2020 after my mom died so that I could put myself on some solid emotional ground during my grief process.

As time went on, I realized how great I feel on all levels and how little I care about having a drink.

I haven’t missed it one second!

Had a breakthrough this week. ✨

I’ve been preparing to leave my job of 5+ years to hike the PCT - and it’s not been as easy as I expected. Major guilt!

Folks might think, “Who cares about that job? Take off and leave it all behind!”

In theory, that’s easy. In practice, not so much.
There’s been a ton of anxiety around how to exit “correctly” and how to “do it right”.

Investigating these feelings further, I realized that the origin was rooted in some sort of good girl complex telling me that I’m letting the organization and my team down in some way. Umm, no Michelle.

Realizing this was big! In the grand scheme of my life, this job means so little.

While I pride myself on strong work ethic and commitment to people I serve, I also know that it does not define me.

⚡️I’m leaping into this grand adventure and crafting my own version of a joyful life!

This week’s lunch prep is focused on a packing a protein punch!

Marinara mixed with whipped cottage cheese over Banza protein noodles and with black pepper chicken sausage on the side!

Depending on my hunger, I may add a side salad but either way, I know I’ve got protein in every layer.

I am deeply committed to sticking to a healthy eating pattern as I prepare for the biggest physical adventure of my life - hiking the entire Pacific Crest Trail (2,650 miles).

I’m challenging myself: What can I accomplish in 75 days to help set me up for success while living on trail?

I’ve been thinking a lot about what it means to mentally prepare for the PCT.

I mean, I’m essentially blowing up my everyday life - leaving my job and school, all that is structural and stable - for a wild 6 month backpacking adventure.

While awake I think I’m ready for this massive change, but my dreams tell me different. And I’m listening.

I don’t have the answers, but mentally preparing this morning looks like:

🔸Offering softness towards my anxiety dreams and the leftovers when I wake up.
🔸Taking a cold morning walk in the darkness and *noticing* what’s around me. Finding magic in the quiet.
🔸Creating space to be unproductive and dreamy.

One thing I know for sure, it sure is both scary and incredible to know that there is more to life than grinding.

Some raw ingredients for lunch prep this week! 🥕

Working with what we’ve got in the fridge/pantry, I’m creating a few personal produce charcuterie-style boards to cater to my favorite “pick a little of this and that” style of eating. 🫐

👉 No fancy recipes and barely any time prepping! Just grilling up the chicken apple sausage and throwing together some everything seasoned cottage cheese and mustard dip. Totally inspired by !

Holiday Week Meal Prep! 🥕

It seems like paying attention is super important on these holiday weeks; to hunger, emotion, favorite foods.
I’m planning ahead for pre and post holiday and focusing on being present and having some fun! 🫐

🔸Breakfast: Simple Pumpkin Spice Protein Pancakes
(blended pure pumpkin + vanilla protein powder + pumpkin spice seasoning + cottage cheese + chia + baking soda) topped with mixed berry compote (frozen berries heated) poured over fresh blueberries.

🔸Linner: Variety plate (hearts of palm + carrot + mini cuke + green onion + broccoli + cauli * almonds + berries + mini peppers + baby corn) dipped in cottage cheese and mustard.

Prepped. Ready. ✔️

I tweaked my back on the first pull of the rower, and he was there every step of the rest of the workout with encouragement, mods, and customized stretches. Grateful!

Hey, wanna see what I’m eating this week?
I’m always looking for meal prep inspo, and has been that for me lately. No one makes me just want to just crunch into some freshness like she does!

Inspired by her lunch plates, I made a solo charcuterie platter for each day this week filled with allll kinds of deliciousness! I will pair it all with protein “dip” (but it’s really just blended cottage cheese, unflavored protein pow, mustard, and spices).

For breakfast, I’m trying something new: Savory parfaits!
I stirred together plain Greek yogurt with chia, everything bagel seasoning, dried herbs, and topped with avo slices and green onions + a savory “trail mix” of roasted chickpeas and mixed nuts and seeds. ❤️ (I’m gonna wait to add that each day to keep it crisp).

Appreciate you peeps who inspire me to stay consistent. It’s the best part of my experience with social media - using it to get inspired!

One way that I keep myself motivated is to

In other words, I’m not waiting for motivation’s fickle way to come to me, I create it.

This morning that looked like an exercise to help me brand this training phase for myself.

What I learned: It is layers of work and is equally about DISCIPLINE and JOY.

I’m on a mission.

I’ve set my sights on the biggest athletic feat I could ever imagine: hiking the Pacific Crest Trail.

More on that later, but I’ll tell you that I’m more determined than ever to make this happen.

That means I’m gonna crawl and run and lift and fuel in a way that will get me there.

I’ve got 5 months to train.
And prove it to myself.

Tackled Sunday Meal Prep early today, and I’m excited about the menu this week!

🔸Breaky: 5 ingredient protein pancakes with mixed berry “syrup”. I threw together peanut butter protein pow, eggs, a little almond flour, cinnamon, baking pow (+ water) and griddled em up.
For the syrup, I just tossed some frozen mixed berries into a pot and slowly heated until runny - then drizzled over a dollop of plain Greek yogurt. YUM.

🔸Lunch: My take on a chef’s salad: grilled chicken, cherry tomatoes, cucumber, cubed cheddar, diced ham, hb egg & red onion - all on a bed of mixed greens and romaine.

🥗I put these in Tupperware so I could shake em up with a spoonful of EVOO. Ready to go!

This week starts a more disciplined eating regimen so that I can prime my body for a big adventure this spring.

It’s not easy but I welcome the challenge of training and fueling for optimum health on the trail.

Sundays are for soup! 🥣

For meal prep this week, I made a big pot of spicy chicken noodle soup to warm up my guts.

I’m focused on packing in the nutrition and flavor, so I made a brew of:
🔸chicken
🔸sipping broth
🔸chickpea pasta
🔸yellow onion
🔸fresh garlic
🔸carrots
🔸celery
🔸frozen peas & corn
🔸can of pure pumpkin
🔸spices: turmeric, cumin, cinnamon, paprika, oregano, bouillon, crushed red pepper, s&p.

After bring to a boil and then simmering for about 45 mins, I will pour into big jars and place at eye level in the fridge.

Ready to take on the week!

It’s Meal Prep Sunday and here’s what’s on the menu this week!

🔸Breakfast: Protein packed yogurt mixture topped with a dollop of peanut butter and sprinkled with cinnamon and unsweetened cacao.

I used a hand mixer to combine plain greek yogurt and cottage cheese with a big scoop of chocolate peanut butter protein powder until smooth, then added toppings. This tastes like dessert but has zero sugar!

🔸Lunch: Quinoa salad with cukes + cherry tomatoes + garbanzo beans + grilled chicken + goat cheese + red onion + romaine lettuce with lemon juice, salt, pepper, olive oil, and quinoa cooked in bone broth. Packed with flavor, color, and nutrients!

Opened my eyes and knew I wanted to start today out strong.
My brain wanted to fight me, so:
🔸I put on my workout gear.
🔸Decided what workout I would do.
🔸Texted friends for accountability.
🔸Meditated my intention.
🔸Drove to the gym saying out loud, “Beginner’s mindset! I’ve got a plan so I will try, I will push!”

🔸Signed up for a new bootcamp class at my gym that sounded extra turbo. Was super nervous about it. Figured I could pretend I was Kathy Bates if I needed to. 😅

Variety is the spice! ✨

I tried my first Jazzercise class tonight and it was everything I was hoping for!

I’ve been wanting to supplement my movement with something else that adds rhythm, dance, grace, balance, and FUN and this hit all the marks.

I was transported back to my dance days and reminded of the ways my body wants to move. I still got it!

Also, there’s something I love about taking a grassroots dance class at the local grange hall down the street with my neighbors - all cheering each other on, ya know?

The next challenge is to make sure I create a weekly routine of crossfit, walking/running and Jazzercise and/or yoga. Prioritizing me!

It’s Meal Prep Sunday, and here’s what’s on the menu this week:

🔸Slow cooker chicken chili with great northern/cannellini/black beans + homegrown onions/chives + corn + garlic + stock + chicken + canned green chilis + Greek yogurt topped with cilantro and avo.
So darn good that we used it as a dip for football snacks!

🔸Breaky: Everything cottage cheese bowls with cukes + homegrown tomatoes + snap peas + hb egg. All kinds of protein and flava!

One thing I’ve found is a critical component of wellness:
experimenting on yourself!

Trying things out keeps things fresh AND keeps you learning. Asking questions like, “What’s working for me right now, and what’s not serving me?”

💥Staying curious + experimenting!

☕️ My experiment this week: Replacing a cup or two of coffee with some sipping broth. Still getting that warm cup I crave with added bonus of more protein and less caffeine!

This morning I woke up feeling ick, and I’d love to tell you how I handled it.

Yesterday was filled with fun, but also not much movement, careless eating, and some uncomfortable interactions. All of which are clearly related.

Instead of reeling and swirling in a spiral today, I woke up determined to counteract ick with 💡and ❤️.

↪️ Shame loooves to thrive in the dark, so one of the first things I did this morning was to write it all down - anything and everything that wanted to come up. Bring it all out into the open.

🧘‍♀️Then, I spent some time in silence to breathe and clear my energy, calming my system.

🏃‍♀️I got outside to get some sun on my face and move my body to shake everything out, get my blood pumping.

📚I read a book that supports my wellness to get my head swirling on THAT.

🏡 I tidied the house. The environment you live in matters! As I gather my thoughts, I’m also gathering things, ya know?

I do all of this to really wrap my arms around myself when these days come up. It’s about being self-aware about what’s going on with me and doing the loving things I know my body/mind/spirit need.

I’m telling you hoping that if you feel this way today, you can maybe do some of this or what *your* body is telling you it needs in the moment.
