AD: Ditch the caramels, suckers & bubble gum for my ghoulish cheese board, made in partnership with Midwest Dairy. It features frightening fiends like brie coffins & muensters galore—get it, as well as mozzarella broomsticks ready for take-off.

Whether you build it with your kiddos or a few pals over wine, you’re sure to have a Dairy Good time.

➰ brie coffins: using a wedge of brie, remove each corner. Add eyeballs, fangs or even a dollop of red jam + a cheese knife to take it to the next level.

➰ muenster fangs: thick slices of muenster make the perfect foundation for creating fangs to slap on a thick block of cheese, cracker, apple slice or whatever you want to make into a Halloween ghoul.

➰ mozzarella broomsticks: cut string cheese in 1/2 or in 1/3s, sliding in a pretzel stick about 3/4ths of the way in then slicing the cheese to give it that broomstick effect. ​Take strips of green onion & wrap them around the ‘broomstick.’

P.S. unlike candy, cheese delivers benefits beyond its delicious variety—& also makes significant contributions to a nutritious diet. Snack strong my fellow ghouls! ​

We all have our guilty pleasures, mine happens to be chocolate—more specifically this double chocolate ganache cake (recipe below). It’s inspired by the cake scene from Matilda, where Miss Trunchbull forces Bruce Brogtrotter to devour that unreal, rich chocolate mammoth of cake 🥴 This is its older, more sophisticated 💅🏾 sibling: it’s silky& decadent. The key ingredients are cream cheese, butter & milk; fun fact, producing a gallon of milk requires 30% less water than it did in 2007! Isn’t that wild!? It’'s equivalent to eliminating the average water consumption of 29 *million* households per year. In summary, eat cake-save the planet! Midwest Dairy Dairy Good

for cake
1 c all-purpose flour
1 c granulated sugar
1/2 c unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 large eggs
1/2 c buttermilk
1/2 c chocolate milk
1/4 c vegetable oil
1 tsp vanilla extract
Butter

for frosting
1/2 c butter
3 oz cream cheese
1/2 c unsweetened cocoa powder
1 tsp vanilla extract
2 ½ c powdered sugar
~2-4 tsp chocolate milk

for cake
Preheat oven to 350 degrees & butter a 9-inch cake rounds. Set aside. Mix together all of your dry ingredients: flour, sugar, cocoa powder, baking soda, baking powder & salt in a stand mixer using a low speed until well combined.

Add all wet ingredients to bowl of dry ingredients: egg, buttermilk, warm chocolate milk, oil & vanilla. Either mix by hand or beat on a medium speed until smooth. Pour batter into greased cake round. Bake for 30-35 mins or until a toothpick inserted into the center comes out clean. Allow to cool for 15-20 mins before removing from cake pan.

Three words: boil, smash & roast. These garlic-butter & herb smashed potatoes are literally everything: crispy, tender & packed with flavor. How would you eat ‘em? And how many would you eat?

1 lb baby potatoes

1 tsp garlic powder

1 1/2 tbsp garlic paste

¼ cup grated parmesan

4 tbsp unsalted butter

1 tbsp olive oil

1 tsp finely chopped parsley

2 tsp salt

½ tsp black pepper

thoroughly rinse & scrub baby potatoes. preheat oven to 425 & grease a large baking sheet or pan. set aside. place potatoes in a large pot. cover with 1” water, add 1 tsp of salt, cover & bring to a boil. reduce heat to medium and cook for 23-25 minutes or until potatoes are tender. drain potatoes & pat dry. place potatoes into a large bowl, drizzle with 1 tbsp olive oil then season with ½ tsp salt, ½ tsp pepper & 1tsp garlic powder. stir & ensure potatoes are well coated.

place potatoes on the pre-greased baking sheet spaced evenly apart. using a potato masher, smash potatoes until they begin to bust open. in a small bowl melt 4 tbs of unsalted butter then mix in 1 ½ tbsp of garlic paste & ½ tsp salt. drizzle about ¾ths of the mixture into the openings & cracks of the potatoes. set the remaining amount of the mixture aside. place potatoes in oven and roast for 35 minutes or until crispy. remove potatoes from oven & sprinkle on parmesan. return to oven for an additional minute or two for cheese to melt. garnish with finely chopped parsley, remaining garlic-butter mixture & salt to taste.
