John found so many great recipes for using plantains and this is one of them. I am gluten sensitive so we try to keep the gluten down to a minimum in the house, which was why he wanted to try this recipe.
It was so good! just 1 enpañada filled each of us. And we have leftover filling to try some new stuff with tomorrow.
Here in Ecuador the food prices are so good. We've been able to eat very well on $60 - $80 a week. it's very exciting to be able to try all these new things.
