Chef Catherine Adonis of the Saxon Hotel in Johannesburg describes the role of the pastry chef as absolutely integral to the fine dining experience, because the guest’s first course and initial impression is the bread which is served upon arrival and the dessert is the last flavour that the client savours upon departure. That’s why this young trailblazer, who initially thought she would work as a chef in a hot kitchen, became one of the first female young chefs to head-up the pastry kitchen of the Saxon Hotel, where she tantalizes local and international guests on a daily basis with her sweet treats having served the likes of Oprah Winfrey, Pharell and Bono. Catherine welcomes us into her pastry kitchen and shares why she fell in love with the sweeter side of the culinary world and what she would still love to achieve in future.
