2. Johnny Cakes & Saltfish: possibly my favorite local dish to make. In St. Kitts and Nevis, there are variations of how Saltfish is cooked. I like mine a little red. Johnny cakes are the perfect addition to any meal.
3. Goat Water: think meaty comfort food. This hearty meal has goat meat, dumplings, breadfruit plus other ingredients to give you a flavorful bite.
4. Cook up: with or without pork? That is the question. Cookup is a rice based dish packed with an array of relish like pork, chicken, Saltfish, sausage and whatever else ‘your hand catch.’
5. Black Pudding: often called blood sausage, has herbs, spices, rice, intestines, pigs blood and more.
6. Steamed Fish & Cornmeal: a nice pot fish steamed with okra, and other vegetables pairs well with ‘turn corn’
