不好意思之前生病,端午节食谱迟了一期。吃了很多高热量的传统粽子,接着一起来做超解暑,简单快速又免烤食谱,“水果水晶果冻粽子”。采用各种各类新鲜水果如青提,芒果,火龙果,蓝莓来制作。果冻里还加了膨发的大黑子和桂花来增添口感和香味。用了简单的PP塑料袋,包绑成小粽子的三角形状。脱模时,看到漂亮可爱的三角粽子型,透视果冻显露了五彩缤纷的水果,还有桂花和大黑子颗粒飘在其中。火龙果天然红色晕染了果冻,形成渐变的果冻色泽,超漂亮,吸睛疗愈。而且食谱搭配了燕菜粉和速溶果冻粉,因此燕菜果冻Q弹且稳固定型~切开来,QQ爽口,水果酸甜多汁,大黑子颗粒口感,桂花淡香清新,甜度刚好。小孩大人都爱,解暑降火。

Now let's make super heat-relief, easy, fast and no-bake recipe, "Fruit Crystal Jelly Dumplings/Zongzi". Made with a variety of fresh fruits such as
Shine Muscat, mango, dragon fruit, and blueberry. Jelly is also added with bloomed basil seeds and osmanthus flower to add texture and fragrance. PP plastic bag is used to wrap jelly into triangle resemblance small rice dumplings shape. After unmolding, can see beautiful cute triangle dumpling shape. The natural red color of dragon fruit blend in with jelly, forming ombre jelly color, so beautiful, eye-catching and therapeutic. 父亲节快到了,一起来做斑马纹牛油蛋糕。做法直接,不需分蛋,用了一个面糊来制作两个口味,原味和巧克力口味。加入鸡蛋确保要分次加入,并混合至完全无蛋液再继续加入,高速混合直到顺滑没严重水油分离,这样做出来的面糊非常顺滑光亮。面糊交替颜色裱叠入模具中间,顶部也用竹签画成漂亮花纹。烤好放凉包保鲜膜收冰箱冷却2小时以上,帮助表皮回油更光亮。切开来,内部斑马纹颜色层次分明,超疗愈~ 蛋糕结构绵密湿润却又蓬松有回弹力,不会干硬,满满牛油香和巧克力香,太香了~
Father's Day is coming, let's make Traditional Zebra Butter Cake. The method is direct, no egg separation, use one batter to make two flavors, original and chocolate flavor. When add eggs make sure to add in batches, mix till no egg liquid before continue to add, high speed mixing until smooth without serious water oil separation, so that batter is very smooth and shiny. The batter is stacked in the middle of the mold with alternating colors, top is drawn into beautiful flower patterns using skewer. After baked, let cool, wrap in plastic wrap chill in fridge for more than 2 hours to help surface return oil and become shinier. Cut open, distinct interior zebra pattern color and layers, super therapeutic~ The cake structure is dense and moist, yet fluffy with good spring back, not dry and hard, full of butter and chocolate aroma, so fragrant~

一起来做 “Kuih Tepung Pelita”椰浆班兰灯糕,传统马来糕点,免烤免蒸食谱。“Tepung Pelita” 意为面粉和油灯, 后者因其形状和颜色与传统的油灯相似。经典的绿模具盒也是采用了新鲜班兰叶来制作。Kuih Tepung Pelita是个双层卡仕达糕点,底部采用了新鲜班兰叶给面糊增添了天然绿色及班兰香,顶部则用了椰奶来制作奶白椰香层。面糊制作过程直接,每层需用慢火各别煮到位直到冒泡,再趁热倒入模具中。热乎乎的面糊余温将提前撒入模具的细砂糖融化,形成底部一层水嫩的甜浆。放入冰箱冷却凝固后,撕开模具,可以看到分明的绿白层次,勺起层次晃动Q弹,口感非常软糯,入口即化,清爽班兰甜香,搭配椰奶咸香中和甜度。满满古早味。
Let's make "Kuih Tepung Pelita", traditional Malay Kuih, no bake no steam recipe. "Tepung Pelita" means flour and oil lamp, the latter references traditional oil lamps in shape and color. The classic green mold box is also made with fresh pandan leaves. Kuih Tepung Pelita is a double-layer custard kuih. Fresh pandan leaves are used for bottom layer to add natural green and pandan fragrance, and coconut milk is used for top layer to add milky white coconut fragrance. The batter making process is direct. Each layer needs to be cooked separately over low heat until bubbling, and immediately poured into mold while hot. Residual heat from hot batter will melt caster sugar pre-sprinkled into mold, forming a layer of moist sweet layer at bottom. After cooled and set in fridge, unmold, distinct green and white layers revealed, layers jiggle when scoop up. Very soft glutinous texture, melts in your mouth. Refreshing pandan sweet fragrance is matched with coconut milk salty fragrance to neutralize the sweetness. Full of ancient nostalgic flavor.

明天就是母亲节了,做了超清爽的“芒果果冻蛋糕卷”给妈妈,我家人一口气就要吃完整粒蛋糕了~用了原味戚风蛋糕为体。趁现在是芒果季节,内部卷入芒果淡奶油糖霜和鲜芒果片。还采用更多新鲜芒果和火龙果搭配,给蛋糕卷裹上一层布满芒果花型的透视柠檬果冻层,特别吸睛又疗愈。切开来, 可以看到内部也有花型芒果片,层次分明的橙白金黄色叠放,松软戚风蛋糕片,搭配蓬松轻盈芒果奶油糖霜,QQ弹弹柠檬香果冻,多汁新鲜芒果火龙果,口感超丰富爽口,清爽不腻。
Tomorrow is Mother’s Day, made super refreshing "Mango Jelly Swiss Roll Cake" for my mum. My family almost ate the whole cake in one sitting~ Original chiffon cake is used as cake base. While now is mango season, mango whipped cream frosting and fresh mango slices are rolled within. Also used more fresh mango and dragon fruit to match, wrap cake roll with see-through lemon jelly layer covered with mango flowers, particularly eye-catching and therapeutic. Cut open, flower-shaped mango slices are revealed within, clear layers of orange, white and golden stacks, soft fluffy chiffon cake slices, light mango whipped cream frosting, QQ bouncy lemon-flavored jelly, juicy fresh mango and dragon fruit, super rich texture, so refreshing.

之前做过了脆皮版还有原味古早味传统厚软曼煎糕,今天一起来做厚软班兰曼煎糕/Manchang Kuih/Murtabak Manis/Peanut Pancake/Apam Balik Kacang, Ban Chien Kuih。采用了新鲜班兰叶来制作,给面糊增添了天然绿色及班兰香,面糊制作过程还蛮直接的,中途需要休息面糊至少1小时以上,而且一定要确保泡打粉和苏打粉有效,防粘锅温够热,这样可以做出蓬松厚弹的曼煎糕。掰开来,切面满满天然绿色蜂窝气孔结构,蓬松暄软,回弹力超好,丰富内馅溢出,疗愈又食欲大开~ 里面自烤的新鲜花生香味搭配奶油玉米,以及黑巧克力搭配香蕉片,两种口味,古早味又回来了。
Previously, I have made Crispy and Original Traditional Thick Manchang Kuih before, and today let’s make Thick Pandan Manchang Kuih/Murtabak Manis/Peanut Pancake/Apam Balik Kacang, Ban Chien Kuih. Made using fresh pandan leaves, add on natural green and pandan fragrance to batter. The batter making process is quite straightforward. Midway need to rest batter for at least 1 hour, must ensure the baking powder and baking soda are still active, with Non-Stick Pan hot enough, can yield fluffy and thick peanut pancakes. Tear apart, sliced cross section full of natural green honeycomb air hole’s structure, soft fluffy, good spring back, rich fillings oozing out, therapeutic yet appetizing~ With the aroma of freshly roasted peanuts match with cream corn, as well as dark chocolate match with banana slices, double flavors, the ancient nostalgic taste is back.
