These CHOCOLATE CHUNK OATMEAL BANANA BARS will take you 10 mins to put together with only 4 easy INGREDIENTS and are packed with wholesome ingredients with bananas, peanut butter, and oats, providing essential nutrients including fiber, protein, and healthy fats for growing kids and family members looking for a tasty, healthy treat 👌

Ingredients:
4 mashed bananas
250g peanut butter
300g rolled oats I’m using my favourite Irish brand White's Oats
Chocolate chips to ( sprinkle to your liking on top)

Method:
Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking dish with parchment paper.
Mash up the bananas and add the peanut butter, rolled oats and mix well until all ingredients are fully incorporated.

Use a spatula or the back of a spoon to spread the mixture evenly in the dish, smoothing out the top and sprinkle with chocolate chips!!!

Place the baking dish in the preheated oven and bake for 12-14 minutes, or until the edges are golden brown and the bars are set.

Once baked, remove the banana bars from the oven and allow them to cool completely in the dish before slicing into bars.

Crunchie Biscuit Cake 💥 Genuinely the nicest biscuit cake ever!!! A simple NO BAKE RECIPE that only uses a handful of ingredients 👌

Ingredients ( picked up all in Aldi Ireland )
200g digestives crushed
185g butter
250g dark chocolate
250g milk chocolate
180g golden syrup
230g crunchies diced up

Topping:
200g milk chocolate melted (optional)
2 crunchies crushed 👌

Method:
Melt the butter, syrup and chocolate gently on the hob until smooth.
In a separate bowl add the crushed digestives and crunchies and tip over the melted chocolate mixture.
Mix and pop into a lined 9x9” tin.
Top with melted chocolate and the remaining crunchie bits and set in the fridge for 2-3 hours.

This will keep in an airtight container for 4-5 days although I doubt very much it will last that long!!!

4 INGREDIENT HOMEMADE SCONES- so quick and easy!!! I love this recipe and it never fails. The scones are fluffy and delicious, and with only 4 basic store cupboard ingredients and 10 minutes of prep time, you can be enjoying your own homemade scones fresh from the oven in no time! 😋

Only 4 ingredients:

490 g self-raising flour
75 g butter
50 g caster sugar
180 ml milk + extra if needed
½ teaspoon salt (optional)

You can jazz them up with Cheese or fruit like Currants, raisins, sultanas - you can just add a handful of dried fruit before adding the milk.

Method:

Place the butter into a mixing bowl, add salt if using. Add the butter and rub with fingertips until the butter is all incorporated and the mixture resembles fine breadcrumbs. Lift your hands above the bowl as you do this to allow as much air as possible to be incorporated.

Mix in the sugar.
If using fruit or cheese, add it at this point.
Add the milk and mix lightly, If the mixture doesn't come together, add extra milk one tablespoon at a time.

Tip out onto a work surface, and press together lightly until it just comes together in a soft ball. Don't knead the dough.

Press out to flatten, approximately 2cm in thickness. You can use a rolling pin if you prefer, but I find that just pressing out with my hands works perfectly well.
Try to handle the dough as little and as lightly as possible.

Using a cutter, cut rounds from the dough. If you don't have a cutter you can use a glass or a cup.

Place the scones on a baking sheet lined with baking parchment.

Brush the top of the scones with milk
Bake in a preheated oven (200C / 400F) for 20 minutes until well-risen and golden.
Remove from the oven and allow to cool.

Enjoy with jam and cream 🫖☕️

Avocado Hummus🥑 🥖
If you like Avocados and Hummus, this is your winning dip 🥑👌it is the smoothest and creamiest hummus recipe I’ve ever made! And the flavour is unbelievably delicious! Perfect for crackers and veggies, or use it as a spread on your favorite sandwich 🥪
This easy avocado hummus dip is the perfect snack any day any time! Who could resist?

INGREDIENTS
1 can chick peas, well drained
2 medium ripe avocados
3 Tbsp olive oil , plus more for serving if desired
1 1/2 Tbsp tahini
3 Tbsp fresh lime juice
1 clove garlic , peeled
Salt and freshly ground black pepper
1/8 tsp cumin

Blend until smooth and creamy 🥑🤗 Serve topped with more olive oil if desired and sprinkle with cilantro and red pepper flakes. Serve with crackers or tortilla chips. Yummy 😋

NO BAKE CHOCOLATE PEANUT BUTTER MINI EGG Crispy Cups!
Just perfect for Easter 🐣 only 6 EASY ingredients.

Myself and my daughter loved making these with all our favourite things in one little bite sized treats!

Takes Only 10 minutes to make and just a little time to set in the fridge. Follow along for the recipe!

You’ll need:
200g milk chocolate
40g coconut oil or butter
200g SuperValu Ireland smooth peanut butter
75g rice crispies
50g Oats ( I’m using White's Oats )
Packet of mini eggs

👉Prepare a 12 hole muffin tray, use paper or silicone cases if you wish.
👉Melt the chocolate and butter together in the microwave or in a bowl over a pot of simmering water.
👉Mix in the smooth peanut butter.
👉Fold in the rice krispies and oats
👉Scoop into the muffin tray and make a space with spoon to set mini eggs.
👉Set in the fridge for 1 hour.
Enjoy!!!
You can store in an airtight container for 2-3 days. If they last that long 😀

A Batch of NO KNEAD PORRIDGE/ OATMEAL BREAD 🍞 Whatever you prefer to call it!!! Fresh from the oven for the week ahead. Full of Gut -loving fibre from the oats and seeds. This easy recipe makes 1 loaf or about 12 -14 slices depending on how thick you like it 🍞👌About 72 KCALs per slice ❤️

The base recipe for oatmeal bread is quite simple, meaning that it can easily be adjusted to your likings.
From savoury - pumpkin seeds to cheese and chorizo to
Sweet - Apple & cinnamon
the customization options are countless. What do you add to yours? Or have you tried to make scones with the mix!!! I’ll share this one next ❤️😋

Here’s the simplest recipe :

INGREDIENTS:
Large tub (500ml) Organic Low fat natural yogurt
360g - (fill the yogurt tub twice) porridge oats
1 Tbsp bread soda
1/2 tsp salt
1 beaten egg
Squeeze of Honey or maple syrup
Topping: Optional but recommend for extra fibre & nutrition Linwoods Healthfoods sunflower, pumpkin, chia Seward and goji berries 👌

Preheat oven to 180°C
Add you 500g tub Glenisk natural yoghurt to a bowl. Next add in your porridge oats by filling the yogurt tub twice.
Add bread soda
Crack the egg into a separate bowl and beat until fluffy.
Add the egg in along with the salt & honey.
Line a bread tin parchment paper or and add ingredients in.
I sprinkled the top with Sunflower, pumpkin, chia seeds & goji berries or Sprinkle with some extra ground porridge oats
Cook for approx 50 mins, do the knife or skewer test (it must come out clean for the bread to be cooked inside).
Remove from the oven and leave to cool.

Perfect HIGH PROTEIN, LOW CARB and LOW CALORIE satisfying Breakfast, lunch or dinner idea 👌

INGREDIENTS :

Cherry tomatoes 🍅
Red Onion
Basil 🌿
Chilli Tuna
4 eggs
60ml low fat milk
Salt & pepper
small square 🧀 to top

Easy Peasy - Step by step:

Grease muffin trays well

Place the tomatoes, onion & basil into trays.

Mix the egg with the milk and seasonings and pour over.

Top with Tuna and cheese to gratin

Serve with salad and enjoy! ❤️

AIR FRYER ROAST WHOLE CHICKEN 🍗👌
This is SO SO EASY, SO QUICK, MESS FREE and SUPER DELICIOUS; perfect for any day of the week!
Any size (large or small) can be used. Just make sure it fits your air fryer tray! Cooking times will vary, depending on the size of the bird used.

I used an extra large 2kg chicken from - Cooking Time 180°C/356 F for 35 minutes breast-side down and then turn it and cook for a further 35 minutes.

For my seasoning
3 tablespoons olive oil
2/3 teaspoons paprika
3 cloves of garlic crushed
2 teaspoons salt
2 teaspoons ground black pepper
1 whole lemon
3 tablespoons olive oil

Pierce the top of the chicken with a fork - Brush or rub the seasoning all over the chicken, including underneath. Make sure you get the seasoning into all the crevices, including under the wings and legs.

Pop in the Airfryer and let the magic happen 👌
