Hello, readers! We’re looking ahead to Fall and thinking about how best our fall issue can serve and support all of you. On that note, we have decided to include an “Ask Edible” column! In other words, we’d love to know your fall cooking, baking, hosting, harvesting, seed saving, and holiday-ing questions so that we can help answer them.

Please reply below or by DM to let us know what you’re wondering about, and we’ll consult an expert with one of your questions to be answered in our October issue.

Cheers!

— Haley and the Edible team

As spring continues to unfurl, we are eating our way through the different seasonal stages from ramps and tender greens during the early season rainy chill to rhubarb and dandelions growing up toward the sun.

Find our full list of spring vegetables, forageables, and meet and poultry in our latest addition, and tell us what seasonal foods you’re loving now in the comments below! (Bonus points for tagging a farm, market, or shop where others can find your favorite seasonal bites this spring!)

Do you know ? Not only do Adam, Yiyi, and their team make the most delicious kombuchas, they also pour creative spirit, deep generosity, and mindfulness into all of their work.

In our latest issue, we asked them why they’re dedicated to food and drink and they told us, “Radical hospitality was the love language in the homes we grew up in.”

This sense of hospitality is immediately apparent when you step into their new taproom in Downtown Troy. Not only are they offering a delicious line up of nourishing beverages and bites; they have also created a unique space for friends and family to gather. The fare might differ from a coffee shop, bar, or restaurant, but their taproom very much offers the kind of third space that makes these other types of establishments such meaningful places for community to connect. Moreover, Yiyi and Adam have taken care and consideration to create a beautiful space that’s accessible and welcoming to all and that brings others into the fold, sharing their cultures and home comforts with everyone.

Long story short… whether you’re a regular or newly discovering ’s incredible offerings, give them a visit. You’ll be welcomed and warmed by what they’re created.

Wild violet and lemon shortbreads offer a springtime trifecta! 💜 Foraging wild violets and seeing their happy purple faces turned up in the grass is a joy. ’ shortbread recipe delivers the perfectly short, buttery texture and flavor we crave in shortbread. And these biscuits look beautifully cheery, don’t you think?

Find Shannon’s shortbread recipe and a bit about foraging and pressing wild violets in our spring issue. (See previous post for a list of our distribution partners to find a copy.)

Hi! 👋 I’m popping on here to quickly introduce myself, share why I’m SO excited to take the reins at Edible Capital District, and ask for your input:

My name is Haley, and I moved to Schenectady 7 years ago when my husband Harry opened . Since then, I’ve fallen in love with living (and eating and drinking!) here, adopted a couple mystery mutts Zucchini and Baloo, and opened in our neighborhood.

Now, I am asking all of you to help me make Edible the biggest and best megaphone for our local food and beverage scene. First up, let’s talk about the people that make this place! We’ll be periodically posting profiles of local gems — people in our food, beverage, farming, and related communities who really bring something to the table through their talent, spirit, generosity, vision, muscle, or creativity. This magazine is about us and for us. Help me highlight the people that make the Capital Region great! Please send all nominations with a brief description of why they’re such a gem to our DMs.

The late summer harvest is in full swing, and we’re reflecting on how lucky we are to have urban and rural landscapes at our fingertips in The Capital Region!

From our latest issue…

“"Breathe in deeply and smell the warmth of summer emanating from this lush Eden in which you find yourself. Yet this earthly paradise is located not in a bucolic rural setting but within the city limits of Troy, just three minutes from the humming whine of traffic of Route 787…. ‘One of the biggest challenges for farms is accessing new markets and customers,’ Alicia of notes.

Although Ben and Alicia never envisioned living in an urban setting, they’ve discovered the joys of having friends nearby. ‘Last year, we needed extra hands to help with the sweet potato harvest,’ Alicia recalls. ‘We sent a text message out to everyone, and so many folks showed up that we finished the harvest in record time.’”

"Let’s get this out of the way: I love bacon. Porky, fatty, sizzling bacon, fresh from the skillet…But, I also love the planet.” writes in our latest issue. That’s where comes in! Founded by the team behind , My Forest Foods runs a mycelium farm on Green Island for the purpose of growing MyBacon, their gourmet bacon-alternative.
