๐ŸŒฑIngredients:

๐ŸŒพQuinoa:

๐ŸŒฑRoasted Vegetables:
2 jalapeno peppers, halved lengthwise
1 Sweet Potato, peeled and diced
Red bell pepper, cored and diced
Zucchini, cut into bit sized chunks
2 tablespoons olive oil
Himalayan salt

๐ŸŒฑSalad:
Shallot, minced
3 cups baby spinach
1 avocado

๐Ÿ“ŒInstructions

Preheat the oven to 400 degrees.

โžก๏ธFor the Quinoa: Prepare according to pack Instructions

โžก๏ธWhile the Quinoa is cooking, add the jalapeno, sweet potatoes, bell pepper and zucchini on a sheet pan and toss with the olive oil and sprinkle with kosher salt.

Roast for 10-12 minutes until everything is golden and tender.

โžก๏ธMake a bed of baby spinach and then pile the quinoa on top and add the roasted vegetables.

โžก๏ธSprinkle with the shallots and add the avocado to the bowl and serve.

My personal fave: "Exercise more, eat less."๐Ÿคฆโ€โ™€๏ธ

โŒ๏ธAfter a certain age this will absolutely not work and that's a fact.

It did not work for me and had the opposite intended effect.

๐Ÿ˜’ I gained weight, couldn't take it off, and generally felt unhealthy.

โ—๏ธImportant: Do not beat yourself up!

You haven't failed; conventional wisdom has failed you.

2๏ธโƒฃ Your friends want you to ask them for help so you learn to stop trying to do everything on your own as youโ€™ve done for most of your adult life.

3๏ธโƒฃ Being married to someone for a long time is really hard. You are sold a lie if you think that marriage is going to be the same 20 years later as it was on your wedding day.
It requires a lot of commitment, effort, compromise, acceptance.

4๏ธโƒฃ The more comfortable you are in your own skin, the more people will want to be around you. This isnโ€™t something you can force. It comes with age.

๐Ÿง  Mental health issues have spiked since the pandemic started.

I'm sure you don't need the data to agree, but currently, there are over 4๏ธโƒฃ0๏ธโƒฃ% of North Americans reportint symptoms of anxiety and depressive disorders. ๐Ÿ˜ž

And that goes hand in hand with the fact that people have been moving less over the past 2 years.

Her research showed that high levels of chronic stress in sedentary people can lead to anxiety and depression EVEN if the person has never experienced mental health issues before.

Fortunately, there is a light at the end of the tunnel. Exercise can help buffer against the horrible effects of chronic stress.

Exercise gives the ๐Ÿง  vital nutrients it needs to thrive.

๐Ÿš1/2 cup tricolor dry quinoa
๐Ÿฅ—6 cups slightly packed chopped ๐Ÿƒkale (it will take about 1 1/2 bunches. Remove thick ribs before chopping, 6 oz chopped)
๐ŸŽ2 crisp sweet apples, cored and chopped
๐Ÿฅœ1 cup walnuts, lightly toasted and roughly chopped
๐Ÿ‡1/2 cup dried cranberries
๐Ÿง€4 oz goat cheese, crumbled
