@noonmumbai by @choudharyvan draws its name from the Kashmiri world for salt, an important ingredient when it comes to fermentation 🍃
Winters at Noon, a 12-course tasting menu, features dishes like Kurdayi with corn miso and peanut podi, lamb marinated in an apricot, skotse, and priyanku miso, and bhakarwadi (a sweet-spicy biscuit) with miso kulfi.
