LOW CARB CALDO VERDE & KALE SOUP
If you love Caldo Verde or Kale Soup, you'll love this low carb recipe.
This recipe tastes pretty close to the original recpie on my blog.
I substituted mashed cauliflower for the potatoes and it works!

So I tried a different method of cooking my parisienne potatoes and they turned out great. So I am going to share it with you.
Posting my recipe for parisienne potatoes. These are super delicious and can be a side with many meals.


Ingredients:
5- lbs of parisienne potatoes.
2 - table spoons of red pepper sauce (pimenta moída)
2 1/2- tablespoons of olive oil.
1- tablespoon of paprika
1 - teaspoon of garlic powder
1 - teaspoons of onion powder
1 - teaspoon of black pepper
1 - tablespoon of dry parsley
Approximately 1 teaspoon of course salt.

Directions:
If you buy the potatoes frozen do not thaw them you are going to pre boil them before you add the spices to them.

In a large stock pot fill it with enough water to cover the potatoes. Bring the potatoes to a boil. Then strain the water from the potatoes let them cool down a little. In a large bowl add all your spices. Toss your potatoes in the spices make sure they are well coated.

Then in a safe baking dish add your potatoes drizzle some more olive oil and sprinkle a little more coarse salt. DO NOT COVER the potatoes.
Cook at 350 degrees for about 30-35 mins or until soft to the touch but don’t over cook them you don’t want to be to soft.

Then enjoy.

3 eggs, lightly beaten
1 large carrot, peeled and cubed
1 small white onion, chopped
