He lives & breathes these two things so much he has his own pizza dough company & has several series dedicated inspired by @nfl teams-I wanted to show how you can pizza dough for more than just pizza. SECONDARY INSPO-Alex is Italian & I’ve always thought that it’s a cuisine that is so versatile & really can join other cultures so i wanted to give homage to his Italian roots-Because of Alex’s love of pizza, NFL & being Italian, I wanted to combine aspects of each into one dish-I’ve never gone to a tailgate so this was a chance for me to make a dish that I think would be great for a tailgate-Here are a few examples of changes(1) Pizza dough as flatbread(2)Using beer to deglaze/moisture; ode to Tailgating(3) Using Italian tomato & chili products to mimic the flavors of pizza as the main component of an iconic North African/Middle Eastern dish(4) Tex Mex spice has a lot of similar spices/flavour profiles of Shakshouka. PRIMARY INSPO-Ryan is the king of pasta so I definitely wanted to make a pasta dish to pay homage to his specialty-Ryan is a true chef & cooked in restaurants. We share a connection that we also both have worked at Michelin Restaurants (Ryan at @_tfl_ ) so I wanted to create a dish that showed technique, pushed some boundaries & was fun and creative. SECONDARY INSPO-Not only just pasta, but Ryan loves making egg yolk based pastas & has his signature “Doubling the eggs” series so I wanted to add that element into the dish but also editing style during the pasta making-Ryan is a big sports fan especially team sports. A great team is one where it’s balanced & everyone works together & highlights each ones skills. FRIDGE FREESTYLN’ EP.9 Bayashi THE DISH:“4 Cheese & Ferment Scrambled Eggs”3 Ferment Custard Eggs, Powdered Cheese Sautéed Mushrooms, Cheddar, Mozzarella & Parmigiano PRIMARY INSPO-Bayashi & I share an interest in fitness & he told me he actually follows a no carb/keto diet. He use to be a personal trainer before covid & also worked as a model for Abercrombie & Finch. I wanted to make a dish that aligned with his diet. -Bayashi has a signature style of video editing so I wanted to stay true to it in the editingSECONDARY INSPO-Because he lives on top of a grocery store; he doesn’t keep anything in his fridge & buys what he needs to shoot videos or to eat. So his fridge was fairly bare w/ leftovers from a shoot but I wanted to try to elevate them including his 3 eggs. One of the best ways to cook the most luscious scrambled eggs is like a risotto. It’s actually been made famous by Gordon Ramsay. By starting the eggs in an almost cold pan & cooking it over low heat while stirring like a risotto creates really custardy eggs that form into small curds. The eggs are spoonable & melts in your mouth but aren’t runny making it great to eat with something crispy like nori snacks-Bayashi loves cheese & it was abundant in his fridge. He also loves making cheese based recipes-I wanted to add in Bayashi’s Japanese heritage so in the eggs I used 3 types of ferments; Ssamjang(not Japanese but he loves Korean flavors & it’s similar in taste to miso), Mirin & Shoyu. Japan is the land of fermentation & these flavors have shaped the flavor profile of Japans cuisine. PRIMARY INSPO: -Danny is known on socials at giving chefs outrageous budgets (high or low) or unique ingredients to create a dish so I wanted to take that on as a challenge. -We shot a video last time where he challenged me to make a dish with $10 so I wanted to challenge myself using that same budget & a supermarket I never have gone before to dictate my dish. SECONDARY INSPO: -I love how all the chefs in Danny’s videos try to push the boundaries of their budgets & elevate the ingredients. I wanted to take that same idea & push the boundaries making a dish that uses humble ingredient’s but looks & tastes like a million bucks. -Growing up, baked pork chop on rice is a classic blue collar cantonese diner dish & wanted to share this dish with Danny who never had the dish before. -Jerry is Taiwanese but also loves all Asian food especially Japanese & Korean. We always go hit up these spots when we hangs so I want to use flavours & ingredients from each of those cultures in this dish
-Jerry is always having fun & having a good time. Just like he is in his videos, he is super playful & can bring that out of the people he collabs with. This is why I wanted to be more playful in the editing & also with the dish elevating the basic pub nachos to “higher grounds”
-I also thought of what I’d wanna eat just hanging with a friend at their home. Back in school, after going out or hitting up a party we’d always go back to someone’s house for AP & I’d always raid their fridge & make some drunchies for everyone.

-Jeremy loves his meal prep meals! I wanted to show how he can use them also as an ingredient. “A dish to make a dish”. Most times we don’t treat premade items as ingredients when you definitely can.
-Jeremy is also really getting into cooking so I wanted to show a classical technique/item called Vol-Au-Vent which is really just a hollowed case/shell of puff pastry. This can be used as a vessel for all sorts of savoury or sweet fillings!
