Chicken Pot Pie with Drop Biscuits
Yield: 8 servings
Prep Time: 30 minutes
Cook Time: 15 minutes

INGREDIENTS
Filling:
• 12 Tbsp. unsalted butter
• 1 and 1/2 cup diced yellow onion
• 2 cups diced carrots
• 3/4 cup all-purpose flour
• 2 cups chicken stock
• 2 cups whole milk
• 1/2 cup heavy cream
• 1/4 tsp. ground nutmeg
• 1/2 tsp. salt
• 1/4 tsp. black pepper
• 3 cups cooked, shredded chicken
• 2 cups sweet peas

Biscuits:
• 2 and 3/4 cups all-purpose flour
• 1 Tbsp. Clabber Girl Baking Powder
• 1 tsp. salt
• 16 Tbsp. unsalted butter, cold and cut into bits
• 1 cup buttermilk

INSTRUCTIONS
For the filling:
Melt the butter and sauté the onions and carrots over medium heat until the onions are translucent.
Add the flour, whisking constantly for 2 minutes. Add the stock and continue whisking while adding the milk and heavy cream. Simmer over low heat until mixture thickens. Add nutmeg, salt and pepper.
Stir in cooked chicken and the peas.
Turn off the heat and set aside.

For the drop biscuits:
Preheat oven to 425 degrees.
Combine flour, baking powder and salt. Cut in butter until the mixture is a crumbly texture.
Stir in the buttermilk until the mixture forms a soft dough.

To combine:
Pour filling into a 9-by 13-inch baking dish and top with 1 ounce scoops of drop biscuit dough to cover.
Bake at 425 degrees for 10-15 minutes until biscuits are golden brown and filling is bubbling.

Jennifer Adams has always had a penchant for older things. Vintage photographs of strangers, cabinet cards and historic homes — all these items and their stories of the past draw her into their hidden world. This is partly what drew her to restore and reside in the historic Butternut Hill property in Terre Haute.

But nothing prepared Adams for the journey she would take when she discovered an old trunk in the depths of the attic of her former Lafayette home containing nearly 400 handwritten love letters from the early 1930s.

Undeterred by harsh weather, a non-breeding white-throated sparrow visits a frosty limb near the photographer’s home in January. Cheerful on the coldest of days, white-throated sparrows are known to sing even on moonlit nights. These birds adapt their diets to the season, and in the winter they can be commonly found at feeders, particularly if black oil sunflower seeds and millet are available. Although they seem abundant, white-throated sparrows have declined by about a third since the mid-1960s; they nest at, or just above, ground level.

Meet Beth Tevlin, president and CEO of the Wabash Valley Community Foundation, and one of our six 2023 Women in Business.

Beth has led the Wabash Valley Community Foundation Inc. since it opened its first office on Sept. 8, 1992. Under her leadership, the Community Foundation has grown to more than $88 million in assets and serves Vigo, Sullivan and Clay counties. Each year, the Community Foundation awards more than $3.5 million in grants and scholarships for the benefit of area residents.

Beth and her husband, Terry, live in Terre Haute. They have 18-year-old twins, Ryan and Lauren, who are seniors at Terre Haute South Vigo High School.

Megan was born and raised in Terre Haute and graduated from Terre Haute South Vigo High School in 2008. She met her husband while working at Starbucks her senior year. She has a daughter, Parker, who is 14.

As a lifelong resident of the Wabash Valley, Mandy has grown to love Terre Haute and all it has to offer. Mandy’s knowledge and experience, including a marketing degree from Indiana State University and her background as a project manager in the commercial construction industry, make her real estate transactions a success.

Roopam Harshawat, president and CEO of Harsha Behavioral Center, is one of our six 2023 Women in Business. She also graces the cover of this edition for us!

In the early 2000s, no inpatient hospitalization was available for children and adolescents. Families had to take their children out of town to seek services. To fill this gap, Harshawat, along with her husband, Dr. Paras Harshawat, opened Harsha Behavioral Center.

When asked about what advice she'd give to young professional women, she said, "Have confidence in yourself, pursue what interests you, and embrace challenges without fear."

Roopam Harshawat is the president and CEO of Harsha Behavioral Center, a freestanding acute psychiatric care hospital established in August 2008 in Terre Haute.

Kim Ingalsbe, general manager of Haute City Center, is one of our six 2023 Women in Business.

Kim has worked at Haute City Center (formerly Honey Creek Mall) for the past 35 years. During that time, the mall has had six different property owners and three different leasing/management companies.

Kim and her husband, Greg, have been married for 35 years and they have two children and three — soon to be four — grandchildren.
