The story of the ooey gooey goodness that is SLO Meltdown SLO MELTDOWN] begins with Jenny Thompson and Eric Fossett, two foodies who were searching for a side hustle. Jenny saw a concept for an interactive raclette cheese scrape at a Chicago farmers’ market that she never quit thinking about, so the two decided to make their own. Half wheels of raclette cheese are placed under a broiler until melted and bubbly, then scraped directly onto a signature sandwich or bowl. The menu includes the Central Coast Cheesesteak piled with smoked tri-tip, and the vegetarian and gluten-free Baked Potato Bowl. SLO Meltdown is popping up all over the county, from Ancient Owl and J Dusi Wines in North County, to Saints Barrel and Liquid Gravity Brewing Company in San Luis Obispo, and down to Birchwood Nipomo . Word on the street is that if you ask nicely, they’ll come to you. 😍🧀😍

Though it was beloved, the Beachwalk BBQ food truck operated by Chef Preston Tripp and Ashlee Alewine did not truly scratch their itch to open their own restaurant. When a building on the west end of Grand Avenue in Grover Beach came on the market, the two jumped on it and Pono Pacific Kitchen was born. The space received a sizable makeover and now, the restaurant is flooded with light, and the comfy, wraparound bar with beautiful tile work gives the establishment a trendy, freewheeling energy. Both the setting and food take inspiration from places Preston has lived: Las Vegas, Southern California, Hawaii and now, the Central Coast. Guests enjoy locally sourced and Pacific-inspired, approachable dishes, such as the misoyaki butterfish with black forbidden rice and local baby bok choy, and the fried chicken and caviar. The sweet pepper relish with ponzu wasabi butter was inspired by Oahu’s famous chef, Roy Yamaguchi, whom Preston has always admired.

Spring rolls filled with the local green produce and ground chicken are light yet satisfying. Served for lunch or dinner, the dish satiates on its own but can also be used as an appetizer to feed a crowd. There’s no oily mess since these are not fried. Rather, these spring rolls are baked to perfection. Don’t forget a big dip of the spring pea sauce, yum!

The perfect rainy day duo! Lion’s Mane Chowder with Truffle Grilled Cheese. Pro tip: GO FOR THE DUNK!👏🏼👏🏼

An elusive dinner plate delicacy, truffles add a level of decadence and depth of flavor to a dish. Hidden among the trees, there are truffles in Paso Robles and harvest happens in January. Nothing is guaranteed, but last year Caelesta Owner and Winemaker Brian Farrell Jr. was able to harvest the woodsy gems. For those who don’t have the nose of a truffle pig (these are special animals trained to sniff out truffles), ETTO carries jarred truffles, which are a great substitution. Lion’s mane is a funky looking mushroom with a texture that’s just like crab meat. It has a variety of uses but tastes delicious in soups or, perhaps surprisingly, cakes for a great vegetarian dish. Mighty Cap Mushrooms in Paso Robles is a reliable local source for all kinds of mushrooms.

Used as an ingredient in lattes, baked goods, ice creams and more, matcha green tea has an earthy taste that adds complexity to a dish or drink. The bright material is distinguished by its sweet, grassy notes, and a history as rich as its flavor.

Green tea is believed to have been cultivated during the Tang Dynasty in 7th–10th century China. Tea leaves were harvested and made into bricks for easy transport. The pulverized roasted tea was then combined with hot water and salt, steeped and enjoyed. Chinese Buddhists adopted a new method, popularized during the Song Dynasty, in which they whipped the tea powder and hot water in the same bowl, making a frothy concoction. In 1191, Japanese Buddhist priests took this sacred ritual to Japan. It quickly became a highly valued item in Zen monasteries and upper society. In Japanese, ma translates in English to “powdered” or “rubbed” and cha is “tea.”

In the western world, matcha is thought to have increased in popularity due to its various health benefits, most notably its anti-inflammatory qualities and antioxidants. Matcha is low in acidity, so it doesn’t evoke the stomach discomfort coffee might for some, yet it still provides a caffeine boost. The green substance also carries L-theanine, which is most known for calming anxiety and increasing focus.

Experience a taste of Europe’s Wine Country in our own backyard with a visit to Cépage , the onsite restaurant at Paris Valley Road Estate Winery . This gorgeous estate is modeled after the domains of the grands crus of France and the dining menu offers a full French culinary experience led by Chef Joe White. Offerings designed around the wine portfolio and dishes are are conceptualized seasonally as new wines and vintages are released. One particular delicacy to rotate through the menu is the can’t-miss duck confit grilled cheese, which features a layering of duck confit, orange marmalade and petit Basque cheese pressed between fresh local bread. Enjoying it paired with a 2018 cabernet franc while overlooking the vineyards doesn’t get more indulgent. Lunch and Sunday brunch are served.

Thank you, for spreading the word. Let’s help the Torres Family!❤️❤️

NEWS: On Monday, Chef Will Torres suffered a heart attack. Kari rushed him to French Hospital when he complained of chest pains. The staff did an immediate EKG and discovered he had severe artery blockage that required surgery. When they coded him, Kari says 15 people flooded the room and went to work while she watched from the corner. They went through an artery in his wrist to place a stent, which is called a "Megatron." (I think we all know Will's new nickname now.)

He's now at home and on the mend thanks to amazing care from French Hospital staff. The kids are doing well and able to stay on schedule with school and sports, with help from friends. The focus for Will and family right now is to recuperate and change his lifestyle to continue the work the doctors started in his body. Yes, this might mean no ribeyes ever again, but thankfully, living "the good life" can look lots of different ways.

In the Torres' case right now, the good life means feeling the community's love. To share love with Megatron and his family right now, you have several options:

1. REACH OUT. The Torres family welcomes your calls, texts, emails, prayers, and smoke signals.

2. FEED THEM. Pick up a night on their meal train (link in bio)

3. HELP WITH EXPENSES. That same link includes a crowdfunding effort to cover the cost of Will's medical procedures. The goal is to raise $10K.

3. TAKE CARE OF YOURSELF. This one is important to Will and Kari: get your cholesterol checked regularly. Work those flaxseeds and psyllium husk into your diet. Reduce your stress load. Take a walk. And give someone you love a hug.

There's so much the family doesn't know yet about what happened this week, nor what will happen next. But we do know one thing for certain: Megatron will ride again.

Those who buy tri tips, steaks or roasts from a local rancher at a farmers’ market have Debbie Paver and her dogged determination to thank. Despite being told for over a decade that she couldn’t sell her beef in such a manner, she finally prevailed. “In 1998, I became the first one in California to sell individual cuts of meat at a farmers’ market,” Debbie recalls. Since that fateful day at the Saturday farmers’ market in Templeton over two decades ago, she’s only missed four markets.

Owner and Purveyor of Charter Oak Style Meats, Debbie says her customers return because of the high quality of her meat. “They know where it’s grown and how it’s raised. These cattle are well fed — they get grass when it rains and locally grown barley hay year-round.” The cattle are humanely raised, with no hormones or antibiotics. The beef cuts are dry aged for at least two weeks to further enhance the flavor before Paver brings them to market. Because she sources solely from her own herd, “when a certain cut runs out, it runs out,” she says.

The year 2022 marks Debbie’s 26th year of selling beef at the Templeton farmers’ market and she also sells her products at the Cambria market every other Friday. Over the years, she’s added pork and lamb to her Charter Oak Style Meats lineup, all raised with the same care as her beef. And she’s done all this while working full-time as a large animal veterinary assistant in Templeton and as a 4-H leader. During her 44 years in the organization, she has passed along her passion for responsible cattle breeding to several generations of children.

The 4-H tradition teaches them untold life lessons, including hard work, ethics and economics. But Debbie also notes that “even if the kids never raise another animal, they at least come away understanding where their food comes from. That’s so important.”
