Ingredients:
6 Figs
1/2 Pound Smoky Bacon strips sliced into halves
1/2 Pound Gorgonzola Cheese (or Blue Cheese of your choice)
1 Baguette - Sliced on a Bias
Instructions:
Cut the tops off the figs.
Slice your bacon strips in half, then wrap bacon strips around the figs.
Put the bacon wrapped figs on a tray in the oven at 350 degrees for 15 minutes.
While your figs are in the oven, slice your baguette at an angle, 1/2 inch-wide slices.
Slather a generous piece of gorgonzola (or blue cheese of your choice) on your baguette slices.
Remove the bacon-wrapped figs from the oven.
Top your gorgonzola and bread with your bacon-wrapped figs.

Ingredients:�2 pounds butternut squash or sweet potato, cubed�1 red onion, roughly chopped�2 cups carrots, peeled and sliced (I like using the rainbow carrots for color)�1 cup walnuts, roughly chopped�3 tablespoons olive oil�2 tablespoons maple syrup�1 tablespoon honey�1 lemon, juiced
Zest of one lemon
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon chili flakes, or more to taste
2 tablespoons fresh thyme leaves
½ cup feta or goat cheese
Directions:
1. Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
2. Prep the vegetables. Peel and cube the butternut squash or sweet potato into 1 inch pieces. Roughly chop the red onion. Peel and slice the carrots into rounds.
3. In a large bowl, combine the vegetables and walnuts. Drizzle with olive oil, maple syrup, honey, lemon juice, and lemon zest. Toss to coat well. Sprinkle with chili flakes, salt, pepper and fresh thyme leaves, then toss again to ensure even coating. Arrange the mixture in a single layer on the baking sheet.

½ cup crushed peppermints

1 ½ pounds baby Dutch yellow potatoes
1 cup olive oil
3 guero chiles (or 6 pepperoncini peppers)
1 cup plus 2 tablespoons flat leaf parsley, finely chopped, divided
1 cup pimento stuffed olives
¼ cup capers
2/3 cup slivered almonds
1 teaspoon sea salt or to taste
Directions:
1. Soak Cod: Rinse and soak cod in water for 36 hours, changing water 4–5 times. Shred and refrigerate.
2. Prepare Sauce: Roast tomatoes until charred, then blend with ¼ onion, 2 garlic cloves, and 1/3 of the roasted peppers.
3. Cook Potatoes: Boil, peel, and set aside.
4. Cook Base: Sauté garlic, discard, then fry onions in olive oil. Add tomato sauce, chiles, and simmer for 45 minutes.
5. Combine: Mix in cod, remaining peppers, potatoes, olives, capers, almonds, and parsley. Simmer 45 minutes.

• a tiny bit of fresh garlic
• 1 egg yolk
• 1/3 cup neutral vegetable oil
• ½ tsp mustard
• a pinch of salt
• a dash of lemon juice
• some lettuce leaves
• ½ ripe avocado
• 1 fresh bun
• 1/3 cup cooked turkey meat, cut up
• some pickles
• some pomegranate seeds
Instructions:
1. To make the mayonnaise, put the egg yolk in a bowl. Crush the black garlic with a little lemon juice, salt, and mustard to make a paste. Add this to the yolk. Start adding the oil, whisking constantly, drop by drop then in a slow trickle, always whisking until you have a firm sauce.
