Summer lunch - Steamed rice, Small mango curry ( saasav / pashingiri ), Papad, Cucumber and Buttermilk
Mango season is here and we are not holding back. This slight sweet, sour and spicy curry is made with small ripe mangoes is a delicacy from the coastal belt. We've used the sugar baby variety here. The curry base is made with spices, coconut, tamarind and jaggery. The recipe is on the blog - search for mango saasav.

A good pav deserves a good bhaji... This one is a Goan speciality - Mushroom Tonak..
So there's this old restaurant in Panaji, Cafe Real, which serves one of the best mushroom Tonak I've had. This is one place that u always recommend folks to go try good veg snacks at. Ive tried various tines to recreate their mushroom curry, but never gotten it right. May be it's just the spices, the hand that makes it or just the sultry Goan air. That curry will always be special.
If you like coconut based curries, you've gotta try this. I have the recipe for Alsane Tonak on the blog that can be repurposed here, just replace the boiled alsane with fried mushrooms. Search for oneteaspoonoflife Tonak on Google. Also leaving the YouTube link in my story.

Good bread is highly underrated...
My friend recently asked a bunch of us which food we feel is highly overrated. Our answers shocked each other, some were willing to break up over it 😂. But the one thing everyone agreed to was that good bread is highly underrated. Having grown up surrounded by variety of pao in Goa, and tasted the pav elsewhere, my belief in that statement is very deep.
I love a bread with a chewy crust and a light airy soft crumb with that slight salty hit. It's all about the texture for me. What is your definition of a good bread?

Sunday breakfast... - Puri, Aloo Sabzi, Jilebi
Last week we followed Ksheera Vrata, the third vrata of Chaturmasa. It meant no dairy or dairy products for a week. It took us sone getting used to and I personally liked black tea much better than the one with plant milk.

Pita pockets with baked falafels and pickled vegetables
Again, a meal inspired by photos I saw online. The pita pockets were 50% wholewheat and 50% all purpose flour (maida). I baked them in the oven and loved how they all puffed up. There was just one stubborn one who wouldn't puff in there and needed to be puffed on the gas like a phulka.
The baked falafels are my favorite kind. Less guilt there too.
I pickled carrots, cucumber and radish in vinegarz water, sugar and salt. Stuffed in some lettuce. Drizzled it with a sauce made of mayo and Sriracha.

Grilled Vegetable Sandwich
I was so tempted by one of the sandwich photos online that I had to make my own. Crusty ciabatta is usually my choice of bread for such sandwiches or a good thick cut sourdough bread. The spread used here is the mushroom pate, recipe in highlights. Some lettuce. And grilled marinated veggies - Zucchini, Red and green capsicum and one baby brinjal. I sliced the veggies and marinated them in olive oil, salt, pepper and oregano in the fridge overnight. Grilled them on my grill pan just before assembling. Happy days!!

Hakka Noodles...
Made these noodles over the weekend. The key to a great batch of noodles for me is the amout of garlic that goes in. The more the merrier, in this case. Also, oil. If you skimp on oil, it will never tastes like that road side noodles that we all cherish. Always add a little oil to the noodles after they are cooked to prevent them from sticking to each other. There are two more essential things that flavor those noodles - ajinomoto or msg and smokiness. The smokiness is difficult to achieve at home as the domestic gas doesn't reach very high temperatures to provide that smoky fragrance. I've found using an iron kadhai sometimes helps me with that flavor. Ajinomoto is completely your choice, it has a bad name for itself, but it's also the thing that provides that slight umamimess to the noodles.
We loved this batch of homemade noodles, it was pur bowl of greasy comfort food on a Sunday afternoon.

Snacks....
Namakpare are one of the easiest and delicious tea time snacks one can make at home. These were made with just maida,salt, and Jeera seeds. They kept us going in the snacks department last week.

Day 6 Breakfast - Chow Chow Bhaat or one plate of uppit with one plate of sheera 😀
I got busy and missed posting a few of the meals. This was the last unique breakfasts coz we repeated the dahi vada on Friday.
Chow Chow Bhaat is a fancy name for a plate of uppit/khara bhaat and sheera/Kesari bhaat served together in Bangalore. While regularly I add at least onions and tomatoes to my uppit, this one was plain, but still tasted good. Also, my sheera is usually full of nuts, but this wasn't, but the jaggery instead of sugar added a whole new flavor.
From tomorrow I'll share the various lunches and dinners. 😊

Snack that kept us going - Shankarpole
These little deep fried sweet nuggets are fed the sweet craving and kept us going. The day I made them I felt we had a lot more than required, but we finished the whole box right on time.
We completed the Shaka Vrata week yesterday. Today we start the second "month" for a week. This week is "Dadhi Vrata", which means no yogurt/curd. This week is set to be the easiest hopefully, unless of course we eat something very spicy 🔥.
Over the next few days, I'll continue to share the food from last week.

I love idly fry as a snack, generally with a little Sriracha sauce. I slice up leftover idlis and fry them in the pan. You can deep fry too, but the oil 🙄.
This breakfast was vegan, gluten free and Delicious!!

Day 3 Lunch & Dinner...
Lunch was chapati and a sort of kadhi. I couldn't use besan, so made a kadhi with ground moong dal. It didn't photograph well, but tasted decent.
Dinner was rice, toor dal tadka, some leftover dal vadas, namakpare and a simple salad of sprouts.

Day 3 Breakfast - Dahi Vada
This was our favourite breakfast of all. Leftover vadas were soaked in a slightly sweet whisked curd. Topped it with the basic sweet-sour chutney that I made with jaggery and amchur. We liked it so much, it's showing up again for breakfast this week.

Day 2 Dinner - Pongal with dal Vada
Not the best looking photo, buy it was our favourite meal. We both love Pongal and didn't really miss the ginger or turmeric that I would have normally added. The vadas,well, anything tastes good when deep fried 😂. They were made of toor dal, moong dal and some moong sprouts. They were generously flavored with pepper and that made them a nice spicy combo with the Pongal.

Day 2 Lunch - Chapati with Mango Seekarne/ Aamras
The only fresh fruit allowed, mango, and I never miss an opportunity to eat one anyway.
Seekarne or Aamras is just mango pulp. If the mangoes aren't sweet, you can add sugar. But these were sweet tasty mangoes, whoever thought one would get them in August 🤷, but I'm not complaining. While puris are the best combination with Aamras, I had enough of deep fried stuff for the day, so settled for chapatis.
