chowder in the spring since Washington still wants us to be cold & in bed 🤪
Ingredients:
1 pack of bacon sliced
4 stalks of celery diced
4 cloves of garlic diced
1 medium onion diced
1/4 cup of flour
2 cans of corn
2 large potatoes diced
32 oz chicken broth
2 cups of water or milk
salt + pepper
dried or fresh thyme
2 tbsp corn starch + 1 cup heavy cream for slurry
cook bacon till crispy. remove and set aside. take out bacon grease but leave some to sauté. bacon grease can be saved for other recipes! sauté onion and celery till soft. add garlic and cook till fragrant. add flour to make a roux. add in more bacon grease if it’s too dry. cook till flour is incorporated. add in chicken broth and water/milk. let soup come to a boil and add in potato’s and corn. cook until potato is tender. add corn starch slurry, salt, pepper and thyme to taste. add in bacon. turn off heat and stir. the soup should thicken while it rests.
Enjoy with some sweet bread! 🫶🏼
note: if you would like the soup to be thicker, take out a 1/4 of the soup before adding bacon and blend in blender. return it back to the soup and stir, then add your bacon
