For Father’s Day, Mrs Half Dozen Journey got me the griddle insert for my Weber grill (https://amzn.to/4czATwM), so in this episode of “You’d Make Someone A Great Wife” we have a week’s worth of food. I’d been wanting the griddle insert for a while and it happened to be on sale. It’s no blackstone griddle, but it gets the job done.
For Father’s Day dinner we had my FIL over and I threw on some New York strip steaks and green beans. I definitely need to pick up a basting cover for doing veggies. I’ve done plenty of steaks on the grill, but the steaks were way better cooking in their own juices with the griddle.
Then on Monday I did chocolate chip/blueberry pancakes for the kids. The wife was down and out with a headache and I needed something quick and easy.
Tuesday’s menu was Smash Burgers with cheese and bacon. All I can say is they were amazingly delicious.
On Wednesday, I did some basic Chicken quesadillas. Easy and quick, but they definitely need some refinment.
Thursday was our oldest’s birthday party with family and she requested Chick-fil-A so I got a break for the evening.
On Friday she had some friends over for her birthday and requested homemade pizza so the griddle got a break. I made 4 pizzas with a delicious sourdough crust that long fermented in the fridge for 3 days to build a lot of flavor. I switched to using a 16 inch pizza steel (https://amzn.to/4eBTyK3) and it definitely made the process easier to have more room in the oven. I was also able to do a bigger pizza which means I needed a bigger pizza peel (https://amzn.to/4cdqTJM). I’m getting better and better on my homemade dough, but definitely need to knead it more on the next go around to give it more strength and less stick. I’m looking forward to fresh garden tomatoes in the next few months so I can get back to making my own fresh pizza sauce.
On Saturday I got another break as it was our traditional Church and Chick-fil-A night. If you’re counting, that’s twice in 1 week which is basically heaven for our oldest.
Finally, On Sunday it was a double header starting off with breakfast burritos in the morning and chicken cheesesteaks for dinner.
