Bake some yummy Banana Muffins with Cream Cheese icing asmr style with me 🧁🍌
These should only take no less than 30 mins to make and between filming and both kids it took me over an hour 😂
Muffins
🍌 1 1/2 cups self-raising flour
🍌 1/2 tsp bicarbonate of soda
🍌 1/2 cup brown sugar
🍌 1/2 cup mashed ripe banana (2 small bananas)
🍌 1/3 cup vegetable oil
🍌 1 egg, lightly whisked
🍌 3/4 cup milk
🍌 1/2 tsp cinnamon
🍌 1/4 tsp nutmeg
Icing
🍌 225g cream cheese, softened
🍌 1/2 cup icing sugar mixture
🍌 1 tsp finely grated lemon rind
Preheat oven to 180°C. Line a 12 x 1/3-cup capacity muffin pan with muffin cases. Combine flour, bicarbonate of soda and sugar in a bowl. Pour wet ingredients into dry (along with cinnamon and nutmeg because you forgot to do this earlier 🙃) and mix until just combined.
Spoon mixture evenly among prepared muffin holes. Bake in oven for 15 minutes
Use an electric mixer to beat cream cheese, icing sugar and lemon rind in a small bowl until light and fluffy. Pipe onto the top of each muffin, sprinkle cinnamon on top and enjoy 🥰
