The best of spring summer menu !🤗⬇️ read and save to know which dishes you should try next .

As you might already know Zizzi restaurant constantly adding new seasonal dishes to the menu which means there is always something new to try .
A few weeks ago we had a lovely lunch with our friends at Zizzi Manchester Piccadilly gardens branch and the food was outstanding !⭐️⭐️⭐️⭐️
I know that every restaurant can have slightly different presentation but we were so impressed with every dish we had to try on that day !
Every visit I try to order something new and here is a few things I tried and loved:

🍴Starters :
Burrata caprese- I love everything with burrata and I'm so happy that I can enjoy it at Zizzi now. Great summer option if you love tomatoes and burrata salad . Light , refreshing and perfect for sharing !

Mozzarella, Basil & Tomato Arancini - not always a fan of arancini but these were so good, full of flavour yet light and crispy!
Great small plate, can be shared and paired with some wine ! Highly recommend to try .

🍴Mains.
Crispy Prosciutto Carbonara - beautifully presented and cooked to perfection pasta dish . Ready to order it again and again . Perfectly balanced , yet creamy with some crispy pancetta . Fantastic addition to the menu . If you love pasta as much as I do- you must have to try this one .

🍴Finally desserts :

Lemon Meringue Sundae - Lemon + Sundae is a match made in heaven for me . Truly delicious summer dessert . If you don't want something heavy and filling and looking for a lighter option I would suggest to try this dessert. Probably my favorite dessert at so far !

This simple Creamy Sun-Dried Tomato Chicken Pasta is the perfect midweek dinner. Quick, easy, hearty, and so delicious!

The combination of cream, chicken and sun dried tomatoes is already hard to beat, but when you add pasta and a few other goodies into the mix, it’s game over.For this recipe I'm using chickpea penne pasta which has nutty flavour and packed with plant based protein 🫛🍽️✔️

serving :3
2 chicken breast chopped into pieces
1 small Onion, finely diced
2 cloves of Garlic, finely diced pinch of Chilli Flakes
Salt & Pepper, to taste
1/2 cup sundried tomatoes shopped
1/2 cup freshly grated Parmesan,plus more to serve
Squeeze of tomato paste
Fresh basil
1/2 cup double cream
Pasta 200gr

🍝For the pasta :
Pop your pasta in well-salted boiling water and cook until al dente. Retain a cup of starchy pasta water just before draining. 
👩🏽‍🍳In the large pan ( im using ScratchDefence ) with some olive oil gently cook chicken pieces until golden , add chopped onion and garnish , add tomato paste and toss together .
Pour in cream, then add sun dried tomatoes and a pinch of chilli flakes. Stir then simmer for 5, or until the sauce thickens.Add some pasta water if needed.
Stir basil and parmesan into the sauce, then season to taste (sauce should be fairly thick at this point). Stir in drained pasta.
Cover for a few minutes before serving .🍽️
Once ready serve with extra parmesan and any leftover basil if desired. Enjoy!

Every Mom Deserves a Little treat—Not Just on Mother’s Day.
I always feel like my to-do list is endless. Cooking, cleaning, laundry, grocery shopping, meal planning, meal prep, meetings, appointments, deadlines, school functions, homework, birthday parties, swimming lessons and work of course . 📋That’s my list for this week. I’m exhausted just reading it. 🥹 I can bet other mom's lists are close to the same, and let me tell you, she needs a break.
Just a bit of time during the day to enjoy your much needed cup of tea or coffee along with the favorite snack - will help you to get thru the day and will make any mom happy.True isn't it ?

My favourite treat at the moment is Loacker Tortina chocolate covered wafer's by 😍 Individually wrapped these delicious crunchy and always fresh wafers are perfect on the go or simply to enjoy at home when you want to give yourself a little break , switch off and enjoy something delicious .

I love milk chocolate and hazelnut ones but dark chocolate are just as good ! Have you tried it ? I guarantee your mum will love it. Why not to surprise her and secretly add one to her bag ? 🎁

Whether you’re new to the wonderful world of matcha or already a seasoned lover, these green energy balls are a delicious way to enjoy matcha beyond your favourite tea bowl. Sweetened with dates , and packed with wholesome nuts, enjoy as a delicious make-ahead snack.🍵🫶🏼

Ingredients ;
To make 5:

3 large dates
4 tbsp almond flour
1 tbsp matcha
3 tbsp almonds blended to small pieces
3tbsp h**p seeds
1tbsp cashew hazelnut superfood spread
Pinch of salt
1 scoop of protein

In a food processor add all the ingredients and blitz until a finer mix has formed. Add water to help make this easier, if needed.  Roll tablespoons of the mix into balls. Roll in extra matcha and crushed almonds, if you'd like. 💚

Toasted coconut pancakes with maple syrup 🥞🥥🍯

The ultimate simple , fluffy and delicious coconut flour pancakes. Thank you for helping me with the ingredients .🫶🏼
Recipe bellow :
Ingredients :
1/2 cup coconut flour
3 eggs
4 tbsp melted coconut oil + for cooking
100ml coconut milk
2 tbsp shredded coconut H&B
2 tsp gluten free baking powder
1 tbsp manuka honey
1 tbsp vanilla

To serve :
Maple syrup
Flaked coconut ( toasted until golden)

Method :
In the bowl whisk the eggs, then add the rest of the ingredients and set aside for a few minutes so the coconut flour can absorb the liquids.

Add a bit of coconut oil to the pan , followed by scoop of pancake batter . Fry the pancakes on low heat until bubbles form on the top, about 3 minutes.
Repeat until all batter is used up. The mix makes 8 pancakes.🥞
Once ready , arrange the pancakes on the plate and top with extra coconut and drizzle with organic maple syrup .
Enjoy !

✨VEGAN CARDAMOM BUNS✨

Soft and deliciously fragrant Cardamom Buns which will fill your home with the aroma of a Danish bakery! My favourite treat this 💚

Recipe bellow:
Ingredients
* For the dough:
* ¾ cup warm plant based milk (I used almond)
* 2 ¼ teaspoons quick rise or active yeast
* ¼ cup coconut sugar sugar
* ¼ cup melted coconut oil
* 3 cups bread flour, plus more for dusting
* 3/4 teaspoon salt
* 2 tsp ground cardamom
* 1tsp vanilla bean paste

* For the filling:
* 2/3 cup dark brown sugar (light brown sugar also works)
* 1 ½ tablespoons ground cardamom /can add some cinnamon too .
* ¼ cup coconut oil , softened
*
To sprinkle sugar granules/ granulated sugar cardamom mix ( optional )
For the glaze (golden syrup ).

Warm milk ( It should be like warm bath water. ) Transfer warm milk to the bowl of an electric mixer and sprinkle yeast on top. Add in coconut sugar, and melted butter and vanilla .Mix until well combined. Next stir in flour and salt and cardamom with a wooden spoon until a dough begins to form.
Place dough hook on stand mixer and knead dough on medium speed for 8 minutes.
If you don’t want to use an electric mixer, you can use your hands to knead the dough for 8-10 minutes on a well-floured surface.

Transfer dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel. Allow dough to rise for 1 hour to 1 ½ hours, or until doubled in size.
Prep the filling .Melt the coconut oil over low heat, then whisk in the coconut sugar, maple syrup, cinnamon, and cardamom.Set aside .

After dough has doubled in size, transfer dough to a well-floured surface and roll out into large rectangle about 2 cm thickness, and spread with the filling.
Fold the dough into thirds, taking the side furthest from you and bringing it towards you two thirds of the way, then folding the other side over it.

✨Here’s a recipe for a decadent cocktail for New Year’s Eve if you’re not of the champagne crowd. ☕️🍸
In a cocktail shaker, combine vodka, coffee liqueur, espresso, and simple syrup. Cover and vigorously shake until outside of shaker is very frosty and foam forms, about 15 seconds.
Double strain into a coupe glass.decorate with coffee beans and chocolate shavings ✨ Enjoy .

✨Mince pie turnovers✨

In our family we love to indulge with classic mince pies after dinner, but this year we decided to try something different and bake these delicious mince pie turnovers instead. This recipe certainly did not disappoint, I don't usually make the shortcrust pastry but it was much simpler than I expected!

These were absolutely delicious, a super fun and festive treat – I think Santa might find one on his plate this Christmas Eve! 🎅🏽😜

AD•This is my favorite cocktail from the beginning of autumn through the Holidays. 🍸✨

It's so festive and refreshing with fantastic seasonal flavors, the Frozen Cranberry Gin Fizz Cocktail does not disappoint!🥂

For my cocktails I used Hyke Gin, which is proudly distilled using leftover fresh grapes! HYKE Gin is the world’s first sustainable grape gin, made in Sussex using left over grapes from UK Supermarket punnets. Zero waste, superb taste.

HYKE Gin is available in Tesco stores nationwide!

For this recipe you will need :

Serving 2:
60 ml gin
300 ml cranberry juice
20 ml orange juice
Ice cubes
Fresh cranberries ( previously frozen)
Sugar for the glass top

Sugar the rim of a cocktail glass for a frosted look.
In a shaker, add ice cubes, gin, cranberry juice and orange juice. Pour over into prepared cocktail glasses .
Garnish with a frozen cranberries .

Christmas is my favourite time of the year as we trying to spend as much time as possible
together , plan and wrap presents and enjoy early evenings with lots of board games and hot drinks .
No matter what we do Swizzels is always here for the family . During the Christmas we always getting a few tubs of to share with the family and guests around . 🍭The selection is fantastic and even perfect for kids .
