She always has something new going on and it is probably the most random thing you’ve ever imagined! A native of Beaver Dam, KY, Stephanie stays busy with her family. She is wife to her hilarious husband, Don, the mother of a son, Avery – age 18 and a daughter, Piper – age 17.

I saw this yesterday on Never Empty Nest and it struck a chord. I remember as my kids were growing, I constantly thought "this is my favorite age." And somehow it seemed that no matter how old they got, I loved that stage as much or more than the last. Parenting college kids is so much fun - far more enjoyable than I ever imagined it would be. But, now looking at my children as adults, I do sometimes long for the days when they were small. Their high-pitched voices, tiny laughs, funny sayings, and how they smelled. Time is definitely the most cruel thief.

My baby girl is 19 today. She is light, joy, & happiness - and has been every day of her life. Being her mom has kept me on my toes, cost me a fortune. & caused me to laugh so hard I thought I would pass out. I hear myself in her words & see myself in her smile. (Genetics are a wild phenomenon.) To the most driven, humble, & beautiful person in the world - happy birthday. I love you so very much.

If you are traveling this summer and aren’t using packing cubes - you aren’t living! They not only make it so easy to pack, but on the way home - I flip them. One cube has clean clothes and one has dirty. Then I just carry the one with dirty clothes to the washer & sort! No more needing to wash everything because they’ve been “touching” in your suitcase!

I love to travel and I'm so thankful that I get to do it often. Work and a very active life following my kids has helped me to see the world and jet set away from home at least once a month if not more! Using apps to keep track of my "comings and goings" is a necessity and one that I can't live without. There's no sense in carrying a folder around with all of your paperwork when technology can put it all in the palm of your hand.

One of the biggest surprises to me, when I was going through cancer, was my reaction to losing my hair. Cancer hair loss was by far one of the most traumatic parts of the journey.

My doctor advised that with the type of chemo that I was taking, I could expect my hair to begin thinning and falling out around Day 10 after my first treatment. And she was right - almost to the exact hour.

It is so easy to cook an entire chicken in the crockpot - and it's cheap! I do this often and bag the chicken to use for salads, tacos, sandwiches, or anything else that could use a little protein! It takes minimal effort and saves so much time. Did I mention how inexpensive whole chickens are?

Step 1 - use a crockpot liner (a lifesaver);
Step 2 - slice onions to put on the bottom. You won't taste the onion, it really just keeps it from sticking;
Step 3 - place your chicken on top of the onions;
Step 4 - season the skin of your chicken. For me this changes up every week, but most of the time I use Onion Powder, Garlic Powder, Pepper, and a few slices of cold butter on the top.
Step 5 - stick a lemon in the guts (no necessary, but it adds a great flavor)
Step 6 - add in about 1/4 cup of water or chicken broth - just enough to coat the bottom of the pan. This will help the chicken stay moist and create steam.

Cook on low for 8 hours and shred with a fork or slice! Place in a gallon bag and use as you need it!

My Story

Stephanie Click loves life and living it to the fullest. She always has something new going on and it is probably the most random thing you’ve ever imagined! A native of Beaver Dam, KY, Stephanie stays busy with her family. She is wife to her hilarious husband, Don, the mother of a son, Avery – age 16 and a daughter, Piper – age 14. She is a complete social media fanatic. Always up with the latest technology, she can Tweet, Facebook, Text, Upload Photos, and use the GPS on her iPhone – all while walking down the hall! She is a living “Six Degrees of Separation” and seems to have some sort of obscure tie to most anyone you might ask about! As a family, the Click’s enjoy anything fun-in-the-sun and trips to Disney World. Stephanie especially enjoys being involved in the kids extracurricular activities. Avery is a percussionist in high school band, and Piper is a dancer on a competition team.
