Autumn risotto 🎃

1/2 pumpkin cubed
2 leeks finely chopped
1 cup nutritional yeast
1/2 cup of plonk
1 cup of soaked walnuts
1 cup of rice
soaked for an hour and
then rinsed.

Boil leek stems in liter of water. Heat olive oil in a large pan over medium heat. Add the sliced leek and cook until it browns. Add the rice and cook, stirring frequently until the rice is toasted. Pour in white wine and stir until it's mostly absorbed by the
rice. Add one cup of leck broth ladle at a time, and stir constantly.
Wait for the liquid to be absorbed before adding more. Continue this process until the rice is tender and has a creamy consistency,
Stir in the diced pumpkin during the last 5-7 minutes. Season the risotto. Stir in the nutritional yeast for a cheesy flavor. Top with toasted walnuts and as we did mix in an egg yolk!
