Chicken Tenders with Buttermilk Marinade
Ingredients:
Marinade:
1 cup buttermilk
1 teaspoon salt
1/4 teaspoon ground black pepper
Chicken:
2 lbs chicken tenderloins
Oil for frying (canola, vegetable, or olive oil)
Breading:
1 cup all-purpose flour, measured then sifted
1 cup panko crumbs
1 1/4 teaspoons salt, or to taste
1/2 teaspoon ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons parsley flakes
1 teaspoon ground paprika
1 teaspoon cornstarch
Dipping Sauce:
Honey mustard sauce
Chick-fil-A sauce (optional)
Directions:
Marinate the Chicken:
In a deep bowl, combine buttermilk, salt, and pepper. Add the chicken tenders to the marinade and let them marinate for at least 1 hour or overnight in the refrigerator.
Prepare the Breading:
In a deep dish, combine all the ingredients for the breading.
Bread the Chicken:
Remove the chicken tenders from the marinade, allowing excess marinade to drip off. Generously dredge each tender in the breading mixture.
Fry the Chicken:
In a deep skillet, heat oil to 350°F (about 3 inches deep). Fry the chicken tenders for 6-8 minutes, flipping halfway through, until all sides are crispy and golden.

Ingredients:
125g unsalted butter, softened
1 cup caster sugar
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups self-raising flour, sifted
1/2 cup milk
Buttercream Icing:
125g unsalted butter, softened
1 1/2 cups icing sugar mixture
1 teaspoon vanilla extract
1-2 tablespoons milk
Food coloring (optional)
Instructions:
Preheat oven to 180°C. Line a 12-hole muffin pan with paper cases.
In a large bowl, beat butter and caster sugar with an electric mixer until pale and creamy.
Add eggs, one at a time, beating well after each addition. Add vanilla extract and mix to combine.
Fold in the flour and milk alternately, starting and ending with flour.
Divide the mixture evenly among the paper cases.
Bake for 15-20 minutes or until a skewer inserted into the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
For the buttercream icing, beat butter until pale and creamy. Gradually add icing sugar, beating well. Add vanilla extract and enough milk to achieve a spreadable consistency. Add food coloring if desired.
Spread or pipe icing onto cooled cupcakes.

- 1 (10.5 oz) can cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups crushed Ritz crackers
- 1/4 cup melted butter
- 2 tablespoons chopped fresh parsley (optional)
Directions:
1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
2. In a large bowl, combine the shredded chicken, cream cheese, sour cream, cottage cheese, mozzarella cheese, Parmesan cheese, cream of chicken soup, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
3. Spread the chicken mixture evenly in the prepared baking dish.

Ingredients:
- 3 pounds beef chuck roast
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 (15 oz) can diced tomatoes
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 12 small flour or corn tortillas
- Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, chopped cilantro, lime wedges
Directions:
1. In a large skillet over medium-high heat, sear the beef chuck roast on all sides until browned. Transfer the roast to a crockpot.
2. Add the chopped onion, minced garlic, diced tomatoes, and beef broth to the crockpot.
3. In a small bowl, mix together the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper. Sprinkle the spice mixture over the roast and vegetables in the crockpot.

Directions:

4 cube steaks (about 1/3 lb each)
1 ½ cups all-purpose flour
2 teaspoons fresh ground black pepper, divided
2 teaspoons kosher salt or sea salt, divided
½ teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon baking soda
½ teaspoon baking powder
1 ½ cups buttermilk
2 teaspoons TABASCO® Sauce (original)
2 eggs
1 cup vegetable oil
📝 Instructions:
1️⃣ In a shallow bowl, whisk together flour, 1 teaspoon black pepper, 1 teaspoon salt, paprika, onion powder, garlic powder, baking soda, and baking powder. Set aside.
2️⃣ In another shallow bowl, whisk together buttermilk, TABASCO® Sauce, and eggs. Set aside.
3️⃣ Pat cube steaks dry with a paper towel, removing as much moisture as possible. Season with 1 teaspoon of salt and 1 teaspoon of pepper. Let sit for 5 minutes and pat dry again with a paper towel.

7️⃣ Meanwhile, heat vegetable oil in a heavy skillet or large cast-iron skillet over medium-high heat. Test the oil by dropping a bit of the breading into it; the oil should sizzle and bubble around the breading, about 320-340°F.

Cowboy Butter Lobster Tails

4 lobster tails (about 6 oz each)
1 tablespoon olive oil
Salt and pepper to taste
For the Cowboy Butter:
1/2 cup unsalted butter, softened
1 clove garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
Salt to taste

Directions:

Prepare the Cowboy Butter:
In a small bowl, combine the softened butter, minced garlic, chopped parsley, chives, Dijon mustard, lemon juice, red pepper flakes, paprika, and a pinch of salt. Mix until well blended. Set aside at room temperature.
Prep and Grill the Lobster Tails:
Preheat your grill to medium-high heat.
Using kitchen shears, cut through the top shell of each lobster tail lengthwise. Pull apart the shells slightly and drizzle olive oil over the lobster meat. Season with salt and pepper.

For the cheesy smashed potatoes:
- 1.5 pounds baby potatoes
- 2 tablespoons olive oil
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder

- 2 tablespoons chopped fresh chives (optional)
Directions:
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

"It's Shake 'n Bake and I helped!" 🤣Who else remembers those commercials?? We've been eating Shake 'N Bake pork chops since I was a kid, but now I make them in the air fryer. Extra juicy and extra crispy without heating up the whole kitchen!
INGREDIENTS

4 bone-in pork chops about 1 inch thick
1-2 tablespoons olive oil
1 box Shake ‘N Bake Original Pork
INSTRUCTIONS

Preheat air fryer to 400 degrees.

Brush the pork chops with oil. If you prefer to use less oil, you can moisten the pork with water rather than oil.
Dump the packet of breading in a large ziptop plastic bag or in a shallow dish.
Add the pork chops to the breading, one piece at a time, turning to fully coat it in the breading.
Remove the basket from the air fryer and spritz with non-stick spray. Add the pork chops in a single layer leaving space between each piece for air to flow. Depending on the size of your air fryer you may need to work in batches. For extra crisp breading, spritz with oil spray.

Air fry for 6 minutes, flip, and spritz again with oil. Cook for 5 more minutes or until the internal temperature of the pork reaches 145 degrees using a meat thermometer. Timing will vary a bit depending on the thickness of the pork chops and the air fryer model used.
Serve hot.

Ingredients:
1 large hard-boiled egg, chopped
1-2 tablespoons mayonnaise
2 tablespoons chopped celery
1 tablespoon chopped green onion or chives
Pinch of curry powder

CREAMY GRAPE SALAD - Delicious!
Ingredients

▢8 ounce package cream cheese softened
▢1 cup sour cream
▢1/3 cup granulated sugar
▢2 teaspoons vanilla extract
▢2 pounds seedless red grapes washed and dried
▢2 pounds seedless green grapes washed and dried
▢¼ cup brown sugar packed
▢¼ cup pecans chopped
Instructions
In a large mixing bowl, beat the cream cheese, sour cream, sugar, and vanilla together with an electric mixer until smooth and creamy. Add the grapes and toss to coat.
Cover and refrigerate the grape salad until serving. Before serving, sprinkle the top of the salad with brown sugar and pecans.

Grilled Honey Balsamic Chicken with Vegetables
Ingredients
4 boneless, skinless chicken breasts
1/4 cup balsamic vinegar
1/4 cup honey
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
Salt and pepper to taste
1 red bell pepper, sliced
1 zucchini, sliced
1 red onion, sliced
Instructions
Marinate Chicken:

Air Fryer Fried Chicken
Ingredients:
For the chicken:
1 4-pound fryer chicken, cut into 10 pieces
1 tsp kosher salt
1 tsp ground black pepper
2 cups buttermilk
For the coating:
2 cups all-purpose flour
1 tbsp seasoned salt
1 tsp kosher salt
1 tsp ground black pepper
1 tbsp garlic powder
1 tbsp paprika
Spray olive oil
Instructions:
Marinate Chicken: Season chicken with salt and pepper, soak in buttermilk for at least 1 hour.
Bread Chicken: Mix flour, seasoned salt, salt, pepper, garlic powder, and paprika. Coat chicken pieces in flour mix.
Air-Fry Chicken: Spray air fryer basket with oil, place chicken pieces without touching, spray with oil, cook at 350°F for 14 minutes, flip, spray again, cook for another 10-12 minutes until done.

Ingredients
2 tbsp olive oil
2 large onions, thinly sliced
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
2 cups beef broth
1 cup shredded Gruyère cheese
Instructions
Caramelize Onions: Heat olive oil in a skillet and cook onions until caramelized.
Make Meatballs: Combine beef, breadcrumbs, Parmesan, egg, salt, pepper, and thyme. Form into meatballs.
Cook Meatballs: Brown meatballs in a skillet, then remove.
Simmer: Add beef broth and caramelized onions back to the skillet, bring to a simmer, and return meatballs to cook through.

Cookies & Cream Cheesecake Bundt Cake 🍰
This delightful bundt cake combines the rich
flavors of cookies and cream with a creamy
cheesecake center, making it a perfect dessert for
any occasion
Ingredients:
2 cups crushed Oreo cookies
1 cup unsalted butter, softened
1 cup granulated sugar
4 large eggs
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup sour cream
2 tsp vanilla extract
1 cup cream cheese, softened
1/2 cup powdered sugar
Directions:
1 Preheat Oven: Preheat your oven to 350°F
(177°C). Grease a bundt pan.
2. Cream Butter and Sugar: In a large mixing bowl,
cream together the softened butter and granulated
sugar until light and fluffy. Beat in the eggs one at
a time, mixing well after each addition.
3 Mix Dry Ingredients: In a separate bowl, whisk
together the flour, baking powder, and salt.
4. Combine Mixtures: Gradually add the dry
ingredients to the creamed mixture, alternating
with the sour cream and vanilla extract, beginning
and ending with the dry ingredients.
5. Prepare Cream Cheese Layer: In a medium
bowl, mix the softened cream cheese with the
powdered sugar until smooth.
6. Assemble Cake: Pour half of the batter into the
prepared bundt pan. Layer the cream cheese
mixture over the batter, then sprinkle half of the
crushed Oreos on top. Pour the remaining batter
over the Oreos, and sprinkle the remaining crushed
Oreos on top.
7. Bake: Bake in the preheated oven for 55-60
minutes, or until a toothpick inserted into the
center comes out clean. Let the cake cool in the
pan for about 10 minutes, then invert onto a plate
to cool completely.
8. Serve: Once cooled, slice and serve this
delicious Cookies & Cream Cheesecake Bundt

Mango Sorbet
Ingredients:
3 large, ripe mangoes
200g caster sugar
1 lime, juiced
Tip:
Before Scooping: Leave the sorbet at room temperature for 5-10 minutes before scooping. Warm your ice cream scoop in hot water to make scooping a little easier.
Method:
Prepare the Mangoes:Peel the mangoes with a vegetable peeler.
Cut as much flesh away from the stone as you can and place it in a food processor or blender.
Blend the Ingredients:Add the caster sugar, lime juice, and 200ml of water to the mango in the blender.
Blend for a few minutes until the mango is very smooth and the sugar has dissolved.
Test the mixture by rubbing a little between your fingers; if it still feels gritty, blend for a little longer.
Freeze the Mixture:Pour the smooth mango mixture into a container and place it in the freezer for a few hours.
Blend and Freeze Again:Scrape the partially frozen sorbet back into the blender (if it's very solid, leave it at room temperature for 5-10 minutes first).Whizz until you have a slushy mixture, then pour it back into the container and freeze for another hour or so.Repeat this step. Freeze until solid (another hour or two).
Storage:The sorbet will keep covered in the freezer for up to three months.
