Iโve been seeing this Brazilian lemonade all over IG/Tiktok and finally made some. Itโs sweet, frothy, creamy, refreshing and you only need 4 ingredients. This would also be perfect with some booze ๐ฎโ๐จ
Ingredients:
5 limes
4 cups water
4 cups ice
1 can condensed milk
Instructions:
1. Blend 5 limes and 4 cups of water. Pulse blend for 10-15 seconds. Make sure not to over blend because itโll become really bitter as you blend it more
2. Use a strainer to strain the juice from the chunks of lime. Once fully strained, add juice back to blender and add 4 cups of ice and 1 can of condensed milk (you can add more or less depending on how sweet you want it) and blend well
3. Serve over ice with a slice of lime and enjoy!

This is one of my favorite ways to eat tofu ๐ฅฐ this dish is sweet, tangy, spicy and light. I baked the tofu bites this time but you can also pan fry or air fry them.
๐๐ฃ๐๐ง๐๐๐๐๐ฃ๐ฉ๐จ:
Tofu bites:
1 16 ounce block extra firm
1 tbsp low sodium soy sauce
1 tbsp cornstarch
3 tbsp panko bread crumbs (optional)
Sauce:
1/4 cup low sodium soy sauce
1/4 cup gochujang (korean red pepper paste)
2 tbsp ketchup
3 tbsp honey
1 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp minced garlic
1 teaspoon minced ginger
3 tbsp water
1 teaspoon cornstarch
Garnish (optional):
Sesame seeds
Chopped green onion
๐ฐ๐๐๐๐๐๐๐๐๐๐๐:
1. Preheat oven to 400 F
2. Remove the extra firm tofu from the package and drain out all water. Pat tofu block with paper towel and lightly press to absorb the liquid
3. Add something heavy on top of the tofu block to press out all the water for about 30 minutes. This will make the tofu extra crispy (optional step but highly recommended if you have time - I was pressed on time so I skipped this step)
4. Cut tofu into 1 inch pieces and place in a bowl
5. Toss tofu bites with 1 tbsp soy sauce. Mix well. Then add 1 tbsp cornstarch and mix well. Add 3 tbsp of panko breadcrumbs and mix well (optional- Iโve made this without the breadcrumbs before)
6. Place tofu bites on a baking sheet lined with parchment paper and make sure they do not touch each other
7. Bake for 25-30 minutes
8. In a large mixing bowl, combine 1/4 cup low sodium soy sauce, 1/4 cup gochujang (korean red pepper paste) , 2 tbsp ketchup, 2 tbsp water, 3 tbsp honey, 1 tbsp sesame oil, 1 tbsp rice vinegar , 1 tbsp minced garlic , 1 teaspoon minced ginger
9. Add sauce mixture into a small sauce pan on medium heat and mix in cornstarch slurry (mix 1 teaspoon cornstarch & 1 tbsp of wa
For one of our favorite Korean comfort dishes, Bibimbap, we used lotusfoodsโ Organic Jade Pearl Riceโข. The beautiful jade color is derived from bamboo extract and provides a nice aroma. The fluffy texture of the rice paired beautifully with all the other ingredients in the dish.
Bibimbap, or โmixed rice,โ is a dish with many components that are thoughtfully put together. It usually consists of a medley of vegetables, rice, meat, and egg which is then mixed with a delicious sauce. The beauty of this dish lies in the balance and uniqueness from the variety of ingredients.

Vegetables:
1 small carrot, julienned
1.5 cup bean sprouts
3 cups spinach
6 shiitake mushrooms, thinly sliced
Cooking oil (as needed)
Salt (as needed)
Sesame oil (as needed)
Meat:
Cooking oil (as needed)
1/2 lb ground beef
2 tbsp soy sauce
1.5 tbsp sesame oil2 tsp sugar
2 tsp minced garlic
1/4 tsp ground pepper

2 eggs
Sauce:
1/4 cup gochujang (fermented red pepper paste)
2 tbsp cup sesame oil
2 tbsp sugar

1 tbsp sesame seeds
Garnish:
2 tsp sesame seeds
2 tbsp chopped scallions
Instructions:
1. Cook Lotus Foodsโ Organic Jade Pearl Riceโข according to package instructions.
2. Mix together all the ingredients (except for cooking oil) for the meat portion. Marinate for 15 minutes.
3. Mix together all the ingredients for the sauce. Set aside.
4. In a medium pot, separately blanch bean sprouts, carrots, and spinach. Remove vegetables from water and place in a bowl. Add a pinch of salt and a drizzle of sesame oil to each type of vegetable.
5. Heat cooking oil in pan and saute mushrooms with a pinch of salt. Remove from heat and set aside.
6. Heat cooking oil in pan and cook beef thoroughly. Remove from heat and set aside.
7. Heat cooking oil in pan and fry egg to desired doneness. Remove from heat and set aside.

These napa cabbage rolls are basically a low carb version of dumplings. They are so good and perfect if youโre looking for a nutritious and filling meal that is also low carb and very light. The best part is that you can eat 10 of these and not feel bad about it ๐คช
Ingredients:
1 large napa cabbage
1 lb ground chicken breast
6 chopped green onions
1 cup diced shiitake mushrooms
1.5 cups chopped cabbage
2 tbsp minced garlic
1/2 tbsp minced ginger
1 tbsp shaoxing wine (Chinese cooking wine)
2 tbsp dark soy sauce
2 tbsp light soy sauce
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp fish sauce
1 tbsp oyster sauce
10 chopped thai chilis
Instructions:
1. Bring a large pot to boil and add 1 tbsp salt and add napa cabbage leaves. Boil for 3 minutes and drain water and let cabbage cool for at least 10 minutes
2. Mix the following ingredients together in a large bowl: 1 lb ground chicken breast
6 chopped green onions,1 cup diced shiitake mushrooms, 1.5 cups chopped cabbage, 2 tbsp minced garlic,1/2 tbsp minced ginger,1 tbsp shaoxing wine (Chinese cooking wine)
2 tbsp dark soy sauce, 2 tbsp light soy sauce, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp fish sauce, 1 tbsp oyster sauce. 10 chopped thai chilis
3. Add 1-2 tbsp of meat filling to napa cabbage leaf and roll tightly
4. Steam for 12 minutes (I also air fried a couple and they came out great. Air fry at 380 F for 12 min)
5. You can eat as is or serve with your favorite dipping sauce (I made a simple sauce and mixed black vinegar, fresh garlic & ginger, and chili oil)

This is one of my favorite Korean side dishes. When I go to a Korean restaurant and they have this banchan, I always ask for another refill. Itโs super easy to make at home, requires minimal ingredients and takes less than 10 minutes to prep and make.
Ingredients:
1 tbsp oil
6 sheets fish cake (you can find this in the frozen section of your local Asian market)
1 cup sliced shiitake mushrooms
1 tbsp minced garlic
2 green onions
1/2 onion
3 tbsp soy sauce
1 tbsp mirin
1 tbsp sugar or honey
1 tbsp gochugaru (korean red pepper flakes)
1 tbsp sesame seeds
Instructions:
1. Slice fish cake sheets into ยพ-inch - 1 inch wide strips
2. Add 1 tbsp oil to a hot skillet on medium-high heat
3. Add 1/2 sliced onion, 6 sliced fish cake sheets, 1 cup sliced shiitake mushrooms, and 1 tbsp minced garlic and cook for 2-3 minutes
4. Add 3 tbsp soy sauce, 1 tbsp mirin, 1 tbsp sugar, 1 tbsp gochugaru and cook for 2-3 minutes
5. Chop green onions into 2 inch pieces and add to the skillet. Stir fry for another minute.
6. Top with sesame seeds and enjoy!

This is a soup that feels like a hug when youโre having a long day. Itโs sour, sweet & spicy soup that goes well with white rice. Make sure you use a very FERMENTED Napa cabbage KIMCHI to make this to have intense flavour.
