I love it when the gravy boat comes out!
I hope everyone celebrating had a lovely Thanksgiving holiday. I like to kick off the celebration with a land acknowledgment which is a tradition I started a few years ago. Everything on my table is from Ontario Farmers. I’m grateful for not burning the turkey - next time I need to cover the wings with foil though 😅.
Turkey is brined in an Ontario Apple Cider bath for a day, rubbed in bacon fat & butter, stuffed with blue plums and herbs. I ordered a fresh bird from
Bread stuffing with carrots, onions, celery, mushroom & Pumpkin seeds with homemade turkey broth.
Celery Root Mash with Apple, Yukon Gold, cream & roasted garlic baked with cheddar cheese.
Green beans - may sound boring but this was actually the highlight. I sourced these amazing Ontario Beans from and they were so incredibly fresh and delicious.
The homemade gravy was one of the best ones I’ve made so far. I puree the turkey liver in the gravy and added a half cup of VQA Chardonnay. Saved some wine for dinner because for me, nothing tastes better with Thanksgiving turkey than a beautiful oaked Ontario Chardonnay.
