The real inventor of the potato chip (crisp).

Do you know George Crum?

He was a famous Black chef in the 19th century who served the wealthiest Americans. He was working as a chef in the summer of 1853 when he incidentally invented the potato chip with the assistance of his sister Catherine Speck Wicks.

It happened when a patron at Moon’s who ordered a plate of French-fried potatoes sent back his fried potatoes suggesting that they were too thick and soft and not crisp enough. Crum apparently did not take criticism well, to teach him a lesson he sliced a new batch of potatoes as thin as he possibly could, and then fried them until they were hard and crunchy and the rest is history.

In 1860 George purchased a building on Malta Avenue near Saratoga Lake, and within a few years was catering to wealthy clients including William Vanderbilt, Cornelius Vanderbilt, Jay Gould, and Henry Hilton. A basket of potato chips was placed on every table.

Though George Crum never attempted to patent his potato chip invention, the snack was eventually mass-produced, and sold in bags without giving any credit to the real potato chip inventor(s) George Speck Crum and/or his sister Catherine Speck Wicks.

His restaurant closed around 1890 and he died in 1914 at the age of 92.

In 2018, Avril Nanton and Jody Burton decided to write a book that would change the image of black history in London. Avril, a tour guide, and Jody, a Librarian, decided to write about the many things in London that represent Black Londoners. The book was finally released in June 2021 and since then sales have rocketed and the book is a best seller.

Black London: History, Art & Culture In Over 120 Places, became the first guide book specifically focusing on London’s Black population. This book is a guide with a difference. It explores, records and focuses on Black people’s contribution to both local and global history as well as Black art and culture. It recognises the people, places and stories that are often overlooked and are still missing from mainstream guide-books.
