For Christmas : why not this gorgeous pavlova ? 😉😋

In our home, there's no dessert more celebratory than a pavlova. Something about the whipped sugar, creamy frosting, and loads of berries make it a decadent sweet perfect for special occasions. As New Year's approaches, it's top of my list!

Pavlova
Ingredients:
6 medium egg white (room temperature)
1/4 tsp (2g) salt
1 1/2 cups (300g) superfine sugar
1 1/4 tsp white vinegar
1 tbsp cornstarch
1 tsp vanilla extract or fruit extract
For Frosting:
2 cups heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla
Instructions:
Preheat the oven to 280F. Line two baking sheets with parchment paper and using a 7-inch spring cake bottom, draw two circles on the parchment paper. In a large bowl, whisk together the egg whites and a pinch of salt for a minute. Then add the sugar slowly, a little at a time, while continuing to whisk for 8-10 minutes until the meringue is fluffy and makes stiff peaks. Evenly sprinkle the cornstarch, vinegar, and vanilla over the meringue using a wooden spoon and gently fold the mixture until everything is just incorporated.
Using a wooden spoon, divide the meringue equally into circles on the prepared baking sheets and then use the back of the spoon to create waves in the top of the meringue. Bake until very lightly golden and set, 1 hour and 15-20 min. Turn off the oven and crack the door just far enough to insert a wooden spoon and hold it open. Let the meringue cool completely in the oven.
In a bowl, using an electric mixer or hand mixer, beat the cold cream, powdered sugar, and vanilla until stiff peaks form. Once the pavlova cools completely, place one of the meringue rounds on a plate and spread ½ of the frosting and some fruit filling if you choose. Top with the other meringue round and spread the remaining frosting. Arrange with your favorite fruits and serve immediately.
