These tacos were so memorable that a friend couldn’t stop thinking about them the day after tasting them! They make plenty, perfect for leftovers or freezing. And don’t worry about the amount of Nandos sauce; it blends perfectly for a mild flavor! 🌮
Ingredients:
3 chicken breasts, seasoned with @nandosuk rub and about 75ml sauceAdditional @nandosuk sauce (~100ml)3 large tomatoes1 red onion6 cloves garlic2 tbsp tomato puree500ml chicken stockOptional: chili for extra heat
Steps:
Seal the chicken at 190°C for 8 mins in the airfryer or pan-fry. 🥘Transfer to a slow cooker with the rest of the ingredients. Simmer on low for 5-6 hours or high for 2-3. Low heat yields the best results. ⏳Once cooked, blend the veggies and some liquid to create a sauce. 🌶️Shred the chicken, return the sauce to the slow cooker, and mix. Season if needed. 🧂Dip tortillas into the juices, fry lightly in an oiled pan, sprinkle with 15-20g of cheese, and add chicken on one half. 🧀Cook until crispy, fold, and serve. 🌮
Serving:
Made two large tacos each but typically makes 8-10.Serve with Nandos style rice, dipping juices, fresh lime, coriander, chopped red onion, and a seasoned salad. 🥗
