Buko Pie
(Recipe for 2 pies)
Custard
2 cups buko juice
1 cup evap
3/4 cup cornstarch
1/4 cup AP flour
1/2 cup sugar
1 egg yolk
Crust
600g AP flour
120g butter/margarine
120g shortening
75g sugar
1 egg
85g-110g water
(Prep is the same as empanada dough)
600g buko meat (300g each pie)
Ube halaya
Egg wash
2 8" pie plates
Notes:
*Prepare crust ahead of time (chill crust for at least 1hour)
*Custard should still be warm when filling otherwise it will separate while baking.
