Lemon Crinkle Cookies
Ingredients
- 250g plain flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 150g castor sugar
- 60g veg oil
- 2 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- Zest of 1 lemon
- 1 tsp lemon extract
Coating
- 100g granulated sugar
- 125g icing sugar
Method
1. Pre hest oven to 180C
2. In a bowl mix the flour, baking powder, bi-carb & salt
3. In a separate bowl whisk the egg, sugar, oil, lemon juice, lemon extract, vanilla extract and zest
4. Add in the dry ingredients and fold until combined
5. Put in the fridge for 2 hours to thicken the mixture (best if left overnight)
6. Scoop the dough into balls and roll first in the granulated sugar and then the icing sugar. Do this twice.
7. Bake for 10 - 12 minutes. They will be soft but firm up as they cool.
Optional - When they come out of the oven, make a dent in the centre with a spoon and put in a small amount of lemon curd.
