✨ **Recipe**
- Lamb’s lettuce or rocket as the base
- Savory smoked salmon & mini mozzarella balls
- Sweet, juicy strawberries
- A honey mustard dressing with a zesty lemon kick.
Ingredients:
4 handfuls lamb’s lettuce
or rocket, or mix
3.5 0z (100g) smoked salmon
10 mini mozzarella balls
10 strawberries,
For the dressing:
1 tbsp. honey
1 tbsp. olive oil
1 tbsp. lemon juice
1 tsp. honey mustard
1. Divide the lettuce leaves between two plates. Add the torn smoked salmon and mozzarella balls as well as the strawberries and basil leaves.
2. Mix all the dressing ingredients and drizzle over the salads. Season with freshly ground black pepper and serve.

• 800ml water
Instructions:
1. Chop the carrot, celery, and onion into small cubes. Tie the herbs into a bouquet.
2. Sauté the veggies and garlic clove (in skin) in olive oil for 5-7 minutes until soft.
3. Add washed lentils, herb bouquet, and tomato puree to the pan.
4. Pour in 300ml of water, cover, and simmer for 45-60 minutes, adding an additional 500ml water as needed.
5. Season with salt and pepper, remove the herbs and garlic. Serve with a drizzle of olive oil and, if desired, sprinkle fresh rosemary.Enjoy your warm bowl of lentil goodness! 💛

• Salt to taste
• 200g Halloumi cheese, sliced
• 1 cup rocket salad
• 2 tablespoons toasted pumpkin seeds
Salsa Dressing:
• 1 teaspoon seeded mustard
• Juice of 1 lemon
• 2 tablespoons olive oil
• 1 teaspoon honey
Instructions:
1. Prepare Vegetables:
• Preheat your oven to 180°C (356°F).
• In a large mixing bowl, combine sliced carrots, chickpeas, and red onion.
• Drizzle with 2 tablespoons of olive oil and sprinkle with salt. Toss until well-coated.
2. Bake:
• Spread the mixture evenly on a baking tray.
• Bake in the preheated oven for 30 minutes, stirring halfway through for even roasting.
3. Fry Halloumi:
• While the vegetables are baking, heat a non-stick skillet over medium heat.
• Add 1 tablespoon of olive oil and fry the Halloumi slices until golden brown on both sides. Remove and set aside.
4. Prepare Salsa Dressing:
• In a small bowl, whisk together the seeded mustard, lemon juice, olive oil, and honey until well combined.
5. Assemble the Salad:
• Once the vegetables are done, remove them from the oven and let them cool slightly.
