**Smoked Salmon & Strawberries Salad.**

Bright, fresh, and absolutely delicious! 🌿 This Smoked Salmon & Strawberries Salad is a perfect low-carb dish that’s both nourishing and satisfying. The combination of smoked salmon, mozzarella, and sweet strawberries makes every bite burst with flavor. 🥗🍓

✨ **Recipe**
- Lamb’s lettuce or rocket as the base
- Savory smoked salmon & mini mozzarella balls
- Sweet, juicy strawberries
- A honey mustard dressing with a zesty lemon kick.

Ingredients:
4 handfuls lamb’s lettuce
or rocket, or mix
3.5 0z (100g) smoked salmon
10 mini mozzarella balls
10 strawberries,

For the dressing:
1 tbsp. honey
1 tbsp. olive oil
1 tbsp. lemon juice
1 tsp. honey mustard

1. Divide the lettuce leaves between two plates. Add the torn smoked salmon and mozzarella balls as well as the strawberries and basil leaves.
2. Mix all the dressing ingredients and drizzle over the salads. Season with freshly ground black pepper and serve.

Perfect for a quick lunch or a light dinner! 🕒

🍂 Try this delicious lentils in sauce recipe! Packed with flavor and simple to make, it’s perfect for a hearty meal any day of the week. 🧄🍲

Ingredients:
• 200g lentils
• 1 carrot, 1 celery stalk, 1 onion
• 1 garlic clove (in skin)
• 150g tomato puree
• Olive oil
• Salt & pepper
• Fresh rosemary (optional)
• Herb bouquet (rosemary, thyme, bay leaf)
• 800ml water

Instructions:
1. Chop the carrot, celery, and onion into small cubes. Tie the herbs into a bouquet.
2. Sauté the veggies and garlic clove (in skin) in olive oil for 5-7 minutes until soft.
3. Add washed lentils, herb bouquet, and tomato puree to the pan.
4. Pour in 300ml of water, cover, and simmer for 45-60 minutes, adding an additional 500ml water as needed.
5. Season with salt and pepper, remove the herbs and garlic. Serve with a drizzle of olive oil and, if desired, sprinkle fresh rosemary.Enjoy your warm bowl of lentil goodness! 💛

Oven-Baked Carrot and Chickpea Salad with Halloumi and Salsa Dressing

Ingredients:

• 5 large carrots, peeled and sliced
• 500g chickpeas, drained and rinsed
• 1 red onion, sliced
• 3 tablespoons olive oil (divided)
• Salt to taste
• 200g Halloumi cheese, sliced
• 1 cup rocket salad
• 2 tablespoons toasted pumpkin seeds

Salsa Dressing:

• 1 teaspoon seeded mustard
• Juice of 1 lemon
• 2 tablespoons olive oil
• 1 teaspoon honey

Instructions:

1. Prepare Vegetables:
• Preheat your oven to 180°C (356°F).
• In a large mixing bowl, combine sliced carrots, chickpeas, and red onion.
• Drizzle with 2 tablespoons of olive oil and sprinkle with salt. Toss until well-coated.
2. Bake:
• Spread the mixture evenly on a baking tray.
• Bake in the preheated oven for 30 minutes, stirring halfway through for even roasting.
3. Fry Halloumi:
• While the vegetables are baking, heat a non-stick skillet over medium heat.
• Add 1 tablespoon of olive oil and fry the Halloumi slices until golden brown on both sides. Remove and set aside.
4. Prepare Salsa Dressing:
• In a small bowl, whisk together the seeded mustard, lemon juice, olive oil, and honey until well combined.
5. Assemble the Salad:
• Once the vegetables are done, remove them from the oven and let them cool slightly.
• In a serving bowl, combine the roasted vegetables with the rocket salad.
• Top with fried Halloumi and toasted pumpkin seeds.
6. Add Dressing:
• Drizzle the salsa dressing over the salad and toss gently to combine.
7. Serve and Enjoy:
• Serve immediately and enjoy your delicious and healthy salad!

- 1 block of firm tofu
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 cup vegetable broth
- 2 cups mixed vegetables (e.g., broccoli, carrots, bell peppers)
- Salt and pepper to taste

Instructions:
1. Press the tofu to remove excess water, then cut it into cubes.
2. In a large skillet, heat the sesame oil over medium heat and add the tofu cubes. Cook until golden brown.
3. In a small bowl, whisk together the soy sauce, maple syrup, garlic, and ginger. Pour the mixture over the tofu and stir well.
4. Add the vegetable broth and mixed vegetables to the skillet. Cover and simmer for 10-15 minutes, or until the vegetables are tender.
5. Season with salt and pepper to taste.
6. Serve hot with steamed rice or your favorite grain.
