This is my all time favourite soup recipe!! It’s a tad time-consuming but overall so worth it as it will make around 10 meals worth! This is a family recipe from my fiancé’s family and has been passed down from his Nonna to my mother-in-law and finally to me! We adapted it in our own way and this is my version! Whenever Joseph is feeling a bit tired, overwhelmed, or has just had a long week, Bollito is my go to recipe!Ingredients:1 whole chicken, uncooked2L liquid chicken stock (more if need be!)1kg potatoes, cut into chunks1kg carrots, cut into chunks1/2 celery, dicedHerbs of your choosing500g pork & veal mince (any meat of your choosing)2 garlic cloves, crushed1 cup panko breadcrumbs1/2 cup grated Parmesan cheese1 egg, beatenRice & Parmesan to serve!Method: 1. Place the stock, potatoes, carrot, celery & chicken in a large stock pot & cook on medium heat, with the lid on, for 1 hour, stirring occasionally to prevent burning.2. Meanwhile, mix meatball ingredients together & roll into tiny, bite sized balls. Place in fridge to cool while cooking continues. 3. Once the chicken is cooked through, take it out of the pot to remove all bones & skin from the chicken. Shred the meat into the pot.4. Add the meatballs into the pot, adding any additional stock or water if needed & cook for an additional 30 minutes. Leaving lid off (for a thicker soup) or lid on (for a more liquidy consistency)5. Surgery. Moving. Travel. Recovery. It's all been such a blur but here I am! Let's get back on track with a life update for you all! I injured myself way too many times while travelling last year and it finally caught up to me. I made the quick and immediate decision to have surgery to fix my dodgy knee so I could definitely walk down the aisle. It's a choice with no right answer!Any kind of travel with a wheelchair is exhausting, to say the least. There’s a constant fear that something will happen, and I’ll be without transport for the duration of a trip.
