The chillier weather today meant soup was on the menu! This Potato Leek soup contains low sodium veggie broth, gold potatoes, leeks, onion, garlic, a sprig of thyme and bay leaf, plant milk and a tbsp each of white wine vinegar and nutritional yeast. It was a hit with the whole family and we enjoyed it with a loaf of multigrain bread. Tonight I got home a little before 7 and had to raid the refrigerator to put something together. Thanks to the assistance of the air fryer, I was able to chef up some seasoned tofu that I put over buckwheat noodles and sautéed (low sodium vegetable broth, ginger, and garlic) bok choy.
